So good and so easy. I will never make corn muffins from a box again. Next time I am going to try putting some real corn in too.

Awesome muffins! I cut the recipe in half, and it easily made 12 muffins. The tops had a wonderful crunch, and the muffin was perfectly sweet. Not too sweet, but sweet enough that my sweet-tooth hubby did not need to put honey on his muffin.
This recipe is a keeper! Thanks Ina!

These muffins are quick and easy and will melt in your mouth. I'm not usually a good corn muffin maker. My husband raved over these. Thanks for a great recipe.

Made these last nite and they are wonderful!!!! Halved the recipe for just my husband and myself, and made 6 LARGE muffin. They still came out perfect. Really like these because they don't fall apart like most corn muffins. Way to go Ina!

These were very easy to whip up! All ingredients are pretty much pantry staples!
They tasted great and the whole family loved them. My dad enjoyed them more the next morning with his coffee! I agree that you get more than 12 out of this mix, which isn't a bad thing. Thanks for a great recipe.

What a great tasting corn muffin. Just the right amount of sweetness, grain and fat. Good warm or at room temp.
This recipe is definately a keeper!

I only made half a recipe and yielded 9 muffins. Follow the recipe and the baking time exactily you will have an excellent tasting muffin. I want to move in next door to Ina!

This recipe produced a moist, light, and fluffy corn muffin, but it also made 18 of them! I knew going in that it would make more than a dozen just from the amount of ingredients, and I think I would actually not fill the muffin cups quite so full next time and get even more from the batch, because I didn't like how they rose and flattened out instead of rounding at the top. Also, be aware that the batter is very thick, more like a dough--I can see why Ina used an ice-cream scoop to scoop them on the show, because I'm sure it's the least messy way to do it. Having said all that, I still think these were wonderful, with a great flavor and texture, and I will definitely make them again.

These muffins are moist but not heavy. They have just enough sweetness... not cakey. Ina did not disappoint!. I would make these again. The only problem I ran into... a lot of batter for 12 muffins. Next time I would make more muffins. I did pile up the batter. They didn't overflow onto my oven but I had to cut them apart when they were done.....still yummy!
