    I made this to go with a quiche supper this week and it was great. My husband is German so he appreciates a good cucumber salad. Made a couple of small changes. First after letting the cucmers and onions sit in the salt for four hours. I rinsed them thoroghly and dried them to get rid of all that salt. Also, added in one tsp. of sugar to the recipe for a hint of sweetness. i halved the recipe as it was only for the two of us and it lasted a couple of nights so that was good. Will keep this one! Love Ina's recipes.

    I love Tzatzki sauce that comes with gyros and other mediterranean food. This cucumber salad has all of the same ingredients but allows me to have that tzatziki flavor with any meal as a salad. I love it's cool smooth texture and the fresh cucumber crunch which pairs well with spicy food like curry.

    Like any salad you must adjust the amount of dressing you apply. You can always add more, you can't take it away once it has been added. So, start sparringly and add according to your taste. I've made this recipe several times for family and friends.

    I made this the other night, doing all the steps the recipe called for. I drained the vegetables and the yogurt sour cream dressing overnight plus the next day. That evening I mixed the salad for dinner. There was way too much dressing for the vegetable ratio. I pulled it out of the fridge for the next evening and I could not believe the amount of liquid that the salad was sitting it. I drained it with a colander and it was still too soggy for our tastes. Sorry Ina.....but this dish was not one of your best.

    I see a lot of complaints about the salt.. I dont' agree.. I ususally cook with no salt as we have pressures problems... this was perfect..the salt was needed to draw out the moisture fo the Cucumbers...plus patted away after it was all done... I have to say it was delicious and so refreshing and healthy. I may want to cut down the yogurt and sour cream a bit (for my taste.. but the family loved it ... will be making it again.

    I've already rated this recipe as excellent. I have not made it yet, but I love cucumbers, red onion, yogurt, and sour cream. So, how could it not be delicious? Null doesn't know what she's talking about. The salt is used to extract the water from the cucumbers and onion. Making this dish not so runny, just crisp and flavorful. I'm sure I will love it.

    Anyone who is familar with cooking or dealing with certain vegetables would KNOW that salt is somewhat necessary to bring out flavor, juices, and bitterness. Take the eggplant for example, heavily salting it to get the juice and bitterness out. She patted the cucumbers with paper towels which takes a lot of the salt off, and the salt also drains into the liquid at the bottom of the bowl which is then discarded. I feel that comment was totally unnecessary. And who cares! She makes a lot of great looking recipes, she looks as happy as she can be. Salt is not the "key" ingredient why people are over weight anyhow.. just ridiculous!

    This is a delicious recipe, so refreshing and healthy. Use low fat yogurt if you're concerned about the calories and fat. Null, I wilsh you could be banned from reviewing on this website. I've read your reviews on other food websites, all recipes, etc. and you're not a very nice person. I'm glad I don't know you. Ina rocks!!!

    "Null", that comment was simply unnecessary. This recipe is interesting, not exactly in the best way....however, I don't see how Ina's weight plays into a recipe review. How would you feel if someone was writing about you?....Although I can only imagine that you would say you don't care, but regardless it would hurt your pride whether you admit it or not. Be civil will you.
