I did this today and truth be told that it was absolutely delicious. But I substituted a couple of things...instead of a cup and a half of mayo, I put one cup and added cilantro and instead of the chutney I used a Haas Avocado and the richness that the avocado added was devine. I have to say that this is the first time that I make a recipe that I saw on t.v. Thank You Ina...

Great recipe, but I made a few changes. I substituted 1 cup of mayo with plain greek yogurt (saves about 2000 calories, and used craisins instead of raisins. I also topped the chicken/dressing mixture with the cashews as I wrapped them, which prevented them from getting soft and lost in the mixture. Ate the leftovers the next day, on a slice of toasted wheat bread. An excellent meal that I'll be making again soon.

This dish was divine. SO good and creamy. The flavors melded perfectly together. You get the spicy curry, the sweet chutney (I used peach, and the salty rich crunchiness of the cashews. The rasins are a perfect foil and really help make the dish. SO good. We will make this again many times I am sure. I can't wait to find some fresh healthy ethnic sides to go along with it as well as a special thai beverage. Wonderful Ina! Thank you for making our lives better with your recipes. :

So far so so good! I added dried cranberries to it and cucumber instead of raisins and celery , Hubby is not found of raisins or celery oh well.I am going to try a little apple as well.

I had never had chutney before so I liked using it in this recipe...Definelty use the recommended amount of curry powder..I put a little more the first time I made it and it over powered a bit, but I got it right next time. Super flavorful recipe.

I LOVE this recipe. Not sure when I first saw this on air but I've been making it ever since - at least a couple of years. It's easy and tastes great. We love having this in the summer for dinner with an artichoke. Very filling but yet light and cool on a hot summer night. The dressing does make more than you need but you can also use it as a wonderful salad dressing. The curry is NOT overpowering if you like curry. If you don't like curry then I would suggest making something else.
