I used whole wheat couscous, chicken broth instead of the water and dried cranberries instead of the rasins because that is what I had in my pantry. Shredded the carrots instead of chopping them. I read the other reviews and salted to taste instead of using the full amount of salt. Was a very good recipe. I'll try it again but I think next time, I'll make a tad more dressing.

This is a favorite side dish of ours, but I wholeheartedly agree on the salt issue. I added only 1/2 teaspoon to the dressing instead of the 1 1/2 teaspoons. But, overall, this is such a delicious dish.

This is a great recipe to make in the summer time for picnics or family gatherings. Actually, it's great all year round. Some of the reviewers are correct about the salt, but once you've adjusted it to your taste it really becomes a wonderful recipe. I found Trader Joe's has a couscous mix (couscous, baby garbanzo beans, quinoa, lentils, etc in a bag that taste great with this recipe. This mix has now become my default. Try it, I think you'll like it.

This one is a crowd pleaser when you have no time. I tried it for the first time an hour before the guests arrived and it was a breeze to make. My neighbor advised me to be careful with too much salt so I always tasted it before adding too much salt. It tastes best at room temperature. All the guests had second helpings and took some home. We made it as a side with grilled chicken. I ate it for lunch the next day too.

This is an excellent recipe to bring to a pot luck party! I replaced the raisins with craisins- not a big fan of raisins, so the craisins still add the texture and flavor. I get rave reviews when I make it and the best thing of all, is it is incredibly easy!!

I usually try to make this more of an entree than a side dish so usually I add diced rotisserie chicken to the overall mix. I've also used more raisins than currants since it's a bit more well-liked by our friends and family. It's a quick go-to weeknight meal that isn't overly complicated.

Excellent recipe and combination of flavors...You can serve it as a salad by increasing the vegetable quantity or next to grilled chicken or grilled anything! I would put a bit less onions in it if I want my guests to talk to one another without feeling too awkward ;

First rate! Used chicken broth instead of water...everything else by the book. It was AWESOME!
