    This was AWESOME!!! It was very easy and came together very quickly for me. I did beat the egg yolk and sugar for a long time until it was very thick. I would also say that it easily makes 3-4 servings. I used a hand held mixture and when I added the milk, I had a very frothy mixture. Once I put it back in the pan and stirred with a wisk it thickened quickly. YUMMY!

    a.maz.ing. i made it tonight and it was so easy to make and extremely delicious.

    beware, it did take me much longer for it to thicken on my electric stovetop. i eventually had to turn the heat up higher to get it to thicken properly.

    This pudding was very rich and satisfying to eat. Be aware, though, that when you pour the mixture back into the pot and stir until thickened, it takes a very long time. I kept thinking I'd done something wrong, but be patient.

    BTW, I had no problem with it thickening. For those who did, here are a few questions/suggestions:

    1. Did you beat the egg yolks and sugar until they were very, very thick? By the time you finish beating in the cocoa and cornstarch, it will be thick as peanut butter.

    2. Ina's gas "low heat" could be higher than yours. I have an electric stove, settings are Lo-1-2-3 up to 10 (high.I kept it on 3 for the cooking stage. It took 11-12 minutes to get to the correct consistency.

    3. Try using a wooden spoon instead of a whisk. Keep it in constant contact with the bottom of the pan while stirring. When about a full tsp of the pudding clumps on the bottom of the spoon, switch to a whisk and continue to cook and stir for 1 more minute. This will keep it from clumping and ensure it's thick enough before taking off the heat and adding last ingredients.

    I hope this helps, because this pudding is unbelievably good!

    Hi Ina,
    I love your shows and have used several of your recipes in my catering jobs. But there were problems for me with this recipe: grainy; light in color; did not set-up in a thick pudding-like fashion. I use "Argo" brand cornstarch...is there a better brand? I know that there is a breaking point in temperature where the cornstarch will break down...should I make this in double boiler? As mentioned in the below e-mail -- lactose-free milk was used, could this be a problem? I once used lactose-free milk to make ice cream and it turned out grainy, also. Please advise. I love chocolate pudding and would like to make this recipe work for me. Thanks.

    I loved this so much but had trouble with it thickening (even though I still ate the entire batch by myself - so delicious. However, I would still like to know if there are any helpful suggestions to making the pudding a little thicker. I went exactly by the recipe but it didn't seem to get any thicker than a chocolate syrup.

    This was so good, we ate half of it before it made it to the chill box! I did not have extra large eggs, so I used 7 large yolks. Delicious!
