    This is especially good if you add black bean salsa and shredded Mexican blend cheese! For a little zing, add any hot sauce of your choice. We use medium tortillas and distribute egg mixture accordingly - easier to handle and makes more.

    I tried this recipe yesterday right after the program ended. I didn't have any scallions in the house so I used shallots. Delicious! So good that I made it again this morning. I also love the fact that I'm getting some vegetables in addition to the eggs. I think tomorrow I'll add some cheese and maybe some very finely minced red peppers.

    On Saturday afternoons I like to catch up to my favorite Food Network Shows, after watching this episode I had to make these eggs, my boyfriend is Colombian and when I made them for myself ( just to test but I knew the scallion and tomato were good just for taste testing he was sad I didnt make him some, I had to share even though they were rich and delicious, my favorite breakfast so far, thanks Ina!

    What a marvelous and simple way to prepare a breakfast dish. We saw it and tried it the next morning. Now, we have added chopped turkey sausage to this recipe to make it even better!

    the correct way of naming this plate is Colombian Eggs. Colombia is spelled with a "o" after the "l" not a "u". Plus Colombians do not eat tortillas. they eat this with arepas (a corn grit like muffin. You also drink Colombian hot chocolate drink with cheese (like a mozzarella cheese dip in the hot chocolate so it melts and you spoon it out with the chocolate. That is a Colombian Breakfast!
