Someone asked some time ago about baking the 4th of July cake at higher altitudes. I just baked Ina's cake for the first time, changing the following things for a 4400 foot altitude, and the cake came out looking great. Sugar minus 3 TBSP, eggs plus one egg white, flour plus one and 1/2 TBSP, baking soda minus 1/8 tsp, temperature 365 degrees. The cake cooked in approximately 21-22 minutes.

I made this cake for a fourth of July party and I was sooooo embarrassed to say I had made the cake. The cake is VERYdense and heavy, almost as if someone had taken a shortbread cookie recipe and tried to make it into a cake. It wascrumbly but in a hard (I want to say dry but the cake wasn't dry just hard? if that makes any sense, its hard to describe. Cake is supposed to be moist, soft, and somewhat fluffy (depends on the type of course but I am referring to regular cake. Furthermore, I did not overook it, and in fact I always undercook cakes a litle and let them finish cooking in the pan so I not that the amount of time I cooked it was not off.

The frosting was so-so. The flavor was ok but this frosting was very heavy as well and had WAAAAY too much butter. We had the cake inside and the frosting was still sliding off.

Oh and btw, everyone told me the cake was good! But really, what the heck were they going to say..that was gross don't make it ever again? NO of course not. Just becasue someone says your food is good doesn't mean it is. Alot of times I question peoples reviews becasue I am wondering how much they really cook and if they did something wrong however, I know how to bake and I love baking and I was extra careful with this recipe becasue it was for a party. This is just a bad recipe and unfortunately I think it is the kindof recipe that makes people say they don't like cake. If you don't believe me make the cake but I don't recommend do it for a big party the first time.

I have made this cake two 4th of July's in a row. I even made if for Christmas, minus the red, white & blue. The cake & cream cheese icing itself is a super treat. This year I will be making it at a potluck for my co-works, and one for my family. The cake is a conversation piece. Ina thank you so much for sharing it with us.

my mom and i made this last yr for the 4th of july it was amazing! i'm making it now and i actually had a problem finding a pan like everyone else here. i fit it into a regular cake pan but now i think it might of been a bad idea bc i baked it for longer than 30 mins and the top is all golden but its still juggly. i took it out and i'm going to let it cool and see how it goes. the icing came out great no problems there! i wish that the chefs on here could answer our questions at least!

I've made this cake 3 years in a row and it's always a hit. People are always impressed when I bring it in....even thought it's not that much work to make at all. I also made the cake without the flag decoration for my sister's birthday because it's her favorite white cake recipe. Definitely make this cake!
