this was incredible! just a couple changes though (i sort of mixed this recipe with julia child's- i started the onions on only a medium heat for the first 20 minutes, and only used 1T butter and 3T olive oil with a couple bunches of fresh thyme and two bay leaves. then added a big pinch of salt and a little pinch of sugar, raised the heat to med-high, and kept caramelizing for another 25-30 minutes or so. used ckn stock instead of veal, just bc i had it. then, like others, filled oven-proof bowls 3/4 of the way, added two pieces of baguette to each bowl that i just slightly pushed down, a ton of gruyere and then broiled on high for exactly 6 min. my husband literally said, "i'll never be able to eat this at a restaurant again."

Absolutely freakin' amazing. Loved it. Best French onion soup I've ever had. I did add toasted bread on top and sprinkled it with Gruyere cheese, then broiled it. Easy to make. Yummy.

This recipe is easy to follow and tastes absolutely delicious. Instead of just garnishing with parmesan, I did use a five cheese bread and Gruyere topping under the broiler. I agree with the other reviewers that this soup will give you rave reviews from your family and guests.

This is bar none the best onion soup I have ever tasted. It gets better every day. I always order french onion soup especially if it is from an expensive restaurant. This blows them all away!

THIS IS THE GREATEST-TASTING French Onion Soup EVER!..PERIOD..I received a Standing Ovation from friends on SuperBowlSunday 10'! -These flavors are incredible together..each ingredient complimented the next!.I can understand why someone might be concerned about it to tasting"too boozy"but- NO,- the alcohol combined created the most amazing, unexpected depth & richness of flavor you can't even begin to imagine!(&if simmered for the recommended time or more,-"booziness" should NOT be an issue Also, "souper" easy to create!- Luv, LUV, LOVE this SOUP!!You are guaranteed RAVE REVIEWS!

THE BEST! I have made this several times and always comes out great. I use Coppola Chardonnay for the wine and Kitchen Basics Beef Stock for the whole thing. I also serve it traditional with a sliced-toasted baguette on top and finish with shredded Gruyère cheese under the broiler. Oh - I also half the salt. I most recently made this for our Christmas Eve dinner with garlic roasted beef tenderloin... you can't get any better!

With ton of turkey broth after Thanksgiving, I used it for the entire 8 cup of broth needed. It worked out really well. Very tasty but does not match the veal+beef broth flavor.

It is the only onion soup recipe that I use, it replaced Julia's. I make it exactly (except for veal broth. And use package garlic croutons instead of the traditional bread. It is wonderful, and not too salty at all.
