    This is an excellent substitute for the traditional potato salad, as it doesn't contain any mayo that may spoil in the sun. I added fresh cooked/blanched green beans and cut cherry tomatoes to add some color and texture, which made it look fabulous! Also, if you like, try adding some lemon pepper instead of black pepper to give it an extra tangy flavor... just delicious! My friends all loved it and asked for the recipe!

    I have made this alot and think it is the best potato salad I have ever had. I really like the use of the wine, both and vinegar. I had a hard time finding champagne vinegar and used white wine vinegar the first time. Both were fabulous! Highly recommend for a picnic. Won't spoil like mayo based potato salad.............

    I'm a huge fan of fresh herbs and used plentty from my own garden. I added some fresh tarragon. It was a little fussy but the fantastic flavor more than made up for it.

    I have made this salad several times. It is hands down the best potato salad. The champagne vinegar combined with the dijon mustard make it very flavorful and unique leaving "mayo" competitors in the dust!!!!!

    Only difference, I had to susbstitute white wine vinegar, but still this recipe is incredible! Very great alternative to mayonnaise. Loved it!

    This is BY FAR the best potato dish i have ever eaten. I will be making this over and over. I will use less oil though. So goood!!!!!!

    This potato salad was brought to a potluck picnic Labor Day weekend and it stole the show! Everyone was talking about it and asking for the recipe. SO delicious...even the kids were gobbling it up! Thankfully, the woman that brought it willingly shared her source for this recipe with us. Thank you!!

    I made this the other evening and was very happy w/the results. I didn't use as many potatoes (used Yukon simply because I was serving only for two and possibly leftover for another night, so I cut the ingredients down. It still made a lot of sauce so I would caution to not just dump all of it into the potatoes. I didn't use champagne vinegar (used white vinegar and although I think fresh dill would be good, I didn't have it and used fresh tarragon, parsley and basil. Finally, it's good to have a potato salad recipe minus the mayo.

    I made this potato salad for a summer BBQ gathering and it was of course a hit. I would reduce the amount of olive oil by about half though. There was a little too much oil for my health liking, but it still tasted great.
