So easy and refreshing - a great way to eat corn in the summer! I didn't have apple cider vinegar on hand, so I used white wine vinegar. It was still yummy and I got lots of compliments on it. This recipe is definitely a keeper!

SO GOOD! I love this salad. Its completely delicious and I wouldn't change a thing. So fresh and a new way to serve corn for my family.

I followed your recipe and got nothing but compliments. Thanks for a terrific recipe. Since it is difficult to get fresh corn year around, I purchases extra corn and blanched it. Then placed it in vacuum bags for future use for this recipe.

I was so looking forward to making an eating this. While it was good, it wasn't Ina-amazing like most of her recipes. I followed it to the T. But I found the red onion to be a bit over powering, thankfully I had a can of green giant sweet corn in the pantry that I added to recipe since by then I was that of ears of corn. That helped.
I'll make this again, just going easier on the red onion.

What a find! So easy and so tasty! Thumbs up all around at the cookout I took this to last night! I soaked the chopped onion in water for 10 minutes, then drained well before adding it to the dish to tone down the harsh bite and get rid of some of the sulfur compounds that trouble my tummy. Thank you, Ina, for a great new side dish utilizing our fresh Long Island corn!

We have people over for dinner quite often and they all ask if we are making this corn salad! It is so fresh and delicious. It is just unfortunate that you can't get fresh corn on the cob all year long.

This was a tasty and easy recipe. I made it even easier by using the frozen grilled corn from Trader Joes, which gave it a ton of flavor. I also substituted a jalapeno pepper minced for the onion. The fresh basil was a key ingredient. I used a lot of it.

I took this recipe to a pot-luck and it was a hit! I love that it is simple and easy to make. I changed just one ingredient, from 3 tbls of extra virgin olive oil to 2 tbls of evoo and 1 tbl vegetable oil.
