It's hard to believe that such simple ingredients could make such a delicious side-dish! Everyone raved about this at our July 4th party. It is even great without the basil.

I made this for a week-end barbecue, but I noticed it left on the plates when cleaning up. All my other salads went quickly, so I don't know what went wrong. According to the other viewers, this was absolutely delicious.

Great alternative to corn on the cob. I even made it with frozen corn (defrosted and rinsed it--that's all because I had so much of it in the freezer. Hubby can't eat raw basil, so I used some lime zest and the juice of that lime. WOO! Very tasty...

This was one of 3 recipes that I made for my 4th of July BBQ. It turned out to be the best of them all. I used vidalia onion instead of red and balsamic vinegar instead of cider. I also cooked the corn for 5 vs. 3 minutes. The outcome was fantastic. It took maybe 12 minutes to prepare and that includes the cooking time for the corn!

New to the neighborhood, I was invited to my first block party. Needing a dish to bring that would go well with a cookout, I tried Contessa's Corn Salad. It was a hit! Everybody loved it! My husband wants me to have it in the fridge all the time. Thank you, Contessa, for helping me to fit in with the neighborhood. I love your show!
