Great alternative to corn on the cob. Essential to use fresh basil - would not work with dried. Great sidedish.

I brought this to a family BBQ. My husband suffered a heart attack last year and I was looking for a healthly alternative that was not boring and tasted good. . I had dozens of praises. When people asked about the ingredients, they were suprised that the recipe was so simple. Many people were also impressed with the freshness of the corn. Leaving some of the kearnels attached gives the whole thing a fresh off the cob look. Wish I had sprinkled some red peppers or chopped tomatoes on top to add some color as others suggested. I tripled the recipe and did feel it took longer than expected. Worth it however. This is definately the dish to bring. Light, refreshing and will have them coming back for seconds and thirds.

I loved the flavor the basil added to this. It tasted much more interesting than I had expected. I will definitely make this again and again. It hit the spot!

I make this salad a lot; it is always a request when we go somewhere. Sometimes when I can't find fresh Basil, I substitute fresh Cilantro and it is just as good! Also a great substitution if you just don't like Basil. Awesome either way!!!!

Everyone asks me to bring this recipe now for everything! Its so yummy! When I'm in a hurry- I just buy the new frozen cook in the bag white/yellow corn by Birdseye & make in 5 min. But I have to say it's better fresh!

I wanted something light and delicious for summer that would go with any type of meat. This is the best recipe. I added my own favorites to it such as sweet plum tomatos, a little balsamic vinegar, pimientos, and grated carrots. Fabulous!! Ina is my favorites, she never lets me down.

It's just amazing how good Ina's recipes are!!! Each one I tried so far is a masterpiece. And so easy to make too.
I loved this salad. I just added one spoon of cider istead of 3 and cooked corn for 10 minutes as I like it fully cooked.
I am so excited to explore more!!!
