Made this for our 4th of July celebration and loved it. I was pleased with the recipe just as Ina instructed. This one will be in my recipe box for sure.

This salad is SO good. I am jealous if you have homegrown corn. I made this once for my family who all loved it,including kids. I made it again for a 4th of July bbq party. It was a hit. I added a small amount of roasted red pepper, diced for a little color. Such a refreshing salad!! The hardest part of making this super easy salad is shucking the corn.

Made this for the first time today for 4th of July bbq. So simple, don't change a thing! Excellent summer salad!!! Highly recommend you serve COLD. So delicious and mouth watering. Wanted to make another new salad so tried the baby spinach salad with roasted red onions, candied pecans, goat cheese, dried cranberries in citrus dressing. TO DIE FOR!!! Dressing is delicious....mouth watering combo of flavors!!! I used 1 bag of baby spinach and about 1/4 of a cup dressing. Don't overdress! The roasted red onions ARE A MUST! Adds a wonderful flavor!

YUM! So simple yet so good. The cider vinegar is perfect. I don't love raw onion so I sauteed in olive oil first. Great warm or cold. Perfect for a cookout.

    Yes. That' it.
My husband has a small catering operation and had TONS of cooked corn on the cob left from a job. I kept threatening to make "corn salad" and got an "eeewww " response. Just made this and CAN'T wait to show him how great corn salad can be. It was so easy too!!! Great recipe.

Despite the great reviews, I had only moderate expectations for this dish. Like, how can olive oil, onion, cider vinegar and basil really do all that much for corn? Consider me a convert. These simple ingredients and even simpler preparation result in a fabulously flavorful, light yet memorable dish that you'll want to make all summer long! Off to the farmer's market to get fresh corn so I can make this dish again tonight (with Ina's Indonesian swordfish!

I added just 1/4 of a red bell. It didn't change the flavor but it sure made it colorful. Wonderful recipe!
