Ingredients
  • 3 pounds small red or white potatoes
  • 1/4 cup good olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons minced garlic (6 cloves)
  • 2 tablespoons minced fresh parsley
Directions

Preheat the oven to 400 degrees F.

Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.

Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

This was so easy and yet so delicious! Prep time was minimal and I could prepare another dish while the potatoes were cooking. Just a side note to say I used dried parsely instead of fresh and I sprinkled it over the potatoes before putting them in the oven. Made this recipe as a side dish for our family Thanksgiving dinner last week and it was very good. Rather than using the small red skin potato, I used the big red skin potato for roasting and it worked well. Yes, you do need to be cautious about the garlic being over cooked and burnt. I chopped the garlic in chunky pieces instead of finely chopped and it did not burn to a dark crisp before the potatoes were fully cooked. I love roasted potatoes but will not be making this recipe again. The garlic burnt to a crisp and the potatoes had a chewy consistency. I followed the directions exactly. I usually roast my potatoes in a covered casserole dish, and find that the flavors of the seasonings, and garlic infuse much better that way... and uses a lot less oil. Absolutely delicious! I accidentally added the parsley before putting the potatoes in the oven and was worried it would taste burned because some reviews said the garlic burned. The potatoes were perfect. The parsley and garlic cooked beautifully. I do think there was a little bit too much oil, but they tasted so yummy. I am all about easy when you entertain and the first time I cooked dinner for my soon to be in-laws, I decided to make these potatoes (never having seen Ina's recipe) with a roast whole tenderloin of beef and creamed spinach. I used fingerling potatoes and minced the garlic, tossed in the olive oil with salt and pepper and popped them in the oven with my roast. I turned them every fifteen minutes and then turned the broiler on at the very end. I pulled them out and sprinkled with fresh chopped parsley and put them in a pretty bowl next to the sliced beef tenderloin with mushroom gravy and my future father in law called me a "gourmet cook" and this meal could NOT have been easier. I never sweated this meal for a second cause I knew it could not go wrong. Ina is right on the money! Be sure to mince the garlic really small so it doesn't burn and I put the oven on 375 instead of 400 and then use the broiler to finish. PERFECTION! Tried this recipe about a week ago. It was a huge hit with my family. I did have to add a few sprinkles of salt to the top after I took them out of the oven, though. I served this to company last night and everyone loved it. As other reviewers suggested, I added dried rosemary to the 'marinate' before cooking. I also added 2 medium sweet potatoes (cut into large cubes and baby carrots. These additions made the dish more colorful and flavorful. These turned out delicious and were so easy to make! I halved the recipe since there were only two of us, and I wish I had made more. I added more salt than called for, and also threw in some dried crushed rosemary. Also cooked them a bit longer than an hour, stirring them around every two minutes, until they were really browned. OUTSTANDING! I've made this a few times and I'm always impressed how easy and how much better it is from other roasted potatoes you might get in a restaurant. This is really wonderful...I shorten the cooking time, and saving on electricity, by putting a few Red Skinned Potatoes in the microwave, pressing the "baked potato" button, then adding the # of potatoes I'm using...only takes a few minutes and i cut them in like sizes, then toss in the olive oil, and sprinkle liberally with sea salt and freshly ground pepper...I add loads of freshly minced garlic and chopped fresh rosemary...then roast at 425 fo about 35 to 40 minutes...to die for...a little crunchy on the outside and creamy on the inside. item not reviewed by moderator and published
This was very easy and the spice combination went really well with the potatoes. I did use garlic powder instead of minced though. My issue was with the time, in the recommended oven time it seems you cook the potatoes too much, mine turned out way more roasted than the picture. My main dislike however was the skin, it charred so while the rest of the potato was great, the skin gave it a burned flavor. Might have been solved with less baking time, not sure. Well, I had leftovers cause I made a ton. They still tasted pretty good. They weren't as crispy, though, cause I reheated them in the microwave. I guess you could always use the oven to reheat if it's really important to you to have the crispy texture.
