I don't even like blue cheese and I'm obsessed with this sauce. It is probably the most drool-worthy thing I make. My husband loves it too. We got hooked on it by making it for filet, but I would not hesitate to make this to eat with a SPOON. We eat up every little bit of this sauce long after the meat is gone. So dreamy. Make this. You will not be disappointed.

This was the first time I made this sauce. It was absolutely delicious poured over filet mignon! It was similar, if not better than what we get at restaurants.

Agreed... PERFECTION! Made this with Ina's filet of beef. Even my friend who doesn't like gorgonzola enjoyed it. Absolutely wonderful, will definitely make again!

My aunt made this a few years ago for dinner. We had it drizzled over some Filets and it was nothing short of amazing. My boyfriend and I frequently talk about how delicious it was and how we want to eat it again! One day I'll get around to making it myself!

This was wonnderful. I added a whole clove of garlic to the cream as it was cooking. It made quite a bit so I drizzled some over the tomato relish Bruchetta I had seved as an appetizer. Was a hit.

Luv it!!! I made this sauce with cheaper cut of steak and it made the steak taste so delicious that my hubby thought it was expensive steak!! It would be awesome way to dress up a cheaper steaks for a dinner party. I was a little hesitant to boil the cream for so long but it turned out great!!! I only used half as much cream but still added 3-4 oz of the Gorgonzola cheese. This recipe goes great with the balsamic onions and blue cheese salad which are also in Barefoot Contessa Parties recipe book. I am working my way through the book cooking all of the recipes so the next time I have guest over - I will have lots of options of recipes.

At first I thought Ida was a little nuts, boiling cream for 45-50 minutes; I should have known better, she knows her stuff. This recipe is incredible!!! I used Romano cheese instead of Parmesan simply because I prefer Romano. I also added 1/2 of a roasted red bell pepper; FAMTASTIC!!!!! Otherwise I followed the recipe as stated. Served the sauce with Fettuccie and a nicely grilled filet mignon. Superb!!! Thanks Ida, this is keeper and plan on using this recipe often.
