I made this last night and it was excellent. Fresh, fresh, fresh, new, baby, what ever you want to call your vegetables that's what they need to be for this recipe. If they are this recipe is excellent. Sugar snap peas cook quickly so watch the cooking time.

Wonderful flavors. sauteed shallots several hours before dinner and placed the vegetables in a zip lock bag with a tablespoon of butter and microwaved on high for 3 minutes. They retain the bright green color this way and can be done in advance. Then tossed with the reheated shallots before serving. Sooooo easy and everyone enjoyed.

This recipe was so good, I shared it with a stranger in the check-out line at the grocery store. It's so easy to make, I remembered the recipe after having only cooked it once.

Can I blanch the veggies the day before cooking????
Would like to get as much done day before my dinner party, but don't want to ruin recipe?

Follow the recipe exactly--no need for modifications on this one--trust me! This is a total "do ahead" as Anne Burrel would say. Blanch the veggies and drain them well. I put a few paper towels in a bowl and put the veggies in to remove as much water as possible. I put them in the fridge and did not need to remove them until I was ready to saute them. This is a huge time saver as we all know how difficult it can be to have everything ready at the same time.
The taste of this dish is wonderful. It screams freshness, crispness, simple, healthy, light, and just plain delicious. Thanks for another home run Ina!

This is so nice with any dish and very easy to do. I sometimes add some small pieces of roasted red pepper for color. Beautiful!

Ina's Spring Green Beans get eaten like candy before the meal even begins. Be sure not to over-cook these blanched beauties and they are sweet and yummy. They look wonderful served in a big glass bowl,! They can be made well before dinner time, and whatever spices or herbs you like can be added when re-heated. The last time i made these, they were practically gone before we sat down to dinner!

I made this with asparagus, broccoli florets and sugar snap peas, what I had in the refrigerator at the time. So delicious and beautiful beside my Irish beef recipe and potatoes. My kids, who admittedly are good vegetable eaters, took seconds and thirds.
