love the chicken! Very easey and very tasty! My husband asks for it all the time. I don't care for the peanut butter dip...a little like pb&J

I have not tried the satay dip, but the chicken recipe is great in the summer on the grill.

The Satay Dip recipe, as is, produced a very dark paste. To turn it into a true dipping medium and intensify the peanut flavor I modified it as follows:
    1. Use 16 oz of peanut butter (double the recipe amount
    2. Make the recipe as is to create the paste
    3. While the paste is still hot, slowly whisk in 1/2 cup of HOT whole milk. Whisk until smooth -- yields approx 3 cups

I liked this recipe but the lemon was a little to strong and a little to acidic for me. I may have marinated it to long and maybe next time I'll cut back a little on the lemon. Overall it was a great recipe.

The catsup in the sauce didn't go for me...so maybe I had a mental block and I didn't have sherry so I used a good Merlot which I think works. This dip is more like a sauce than a dip because it is very sick... I prefer Bobby Flay's peanut dip which is: 2 TBSP finely chopped garlic, 1/2 c smooth pnut btr, 1/2 c soy sauce, 1 tsp sugar, 1 TBSP rice vinegar, 1 TBSP hot chili oil, 1/2 c fresh cilantro finely chopped. I might make this again when in the mood for satay only gooier and thicker than normal.

I thought it was light and healthy. This is a great dish to make for a buffet invitation.

i recreated this entire show for my husband and i on a snowy wyoming afternoon and it was wonderful..i didn't marinate the chicken all night about 4 hours and that was perfect and the sauce was so rich and yummy thanks for a great list of snowy afternoon munchies p.s. Ida's long island iced tea was a fabulous addition!!!!!
