I just made this and my family loved it. I live in a limited shopping area so certain cheeses are not available; I used sharp cheddar and gouda. The smokey flavor of the gouda went well with the bacon. This is a keeper!!

Love this recipe. Usually this recipe comes out creamy and delicious. The last time I made it, I was distracted and forgot to cut the heat as I added the cheeses to my sauce. I ended up making it separate which definitely affected the texture. My guess is that those who are not getting a creamy sauce are overcooking their cheeses. It's better to throw it in the oven with the cheese not completely melted (it's going to melt in the oven than to overcook the cheese in the saucepan. The only adjustment that I usually make is to substitute jarlsberg for gruyere. It's cheaper, but still high quality and tasty.

I made this dairy free since we have a milk allergy. I used rice milk, earth balance butter spread, and soy sation shredded soy cheese blend. I also used turkey bacon, regular breadcrumbs, no basil, only a dash of salt, nutmeg and pepper. Overall it was pretty decent, I added a little more salt. This would be a great vegan mac and cheese if you substitute sauteed asparagus for the bacon.

Really like this recipe. It's easy to make and is very tasty. The blue cheese gives it a little something extra. I added more bacon, so didn't add too much salt and cayenne pepper for a hint of heat. I also grated a little bit extra gruyere and added that to the top with the bread crumbs before baking.

I made this Gluten free with Chars noodles and Utz bread. My first time enjoying pasta that was gluten free.... although expensive

Simply fabulous! Delish, creamy, rich. Slight diversions from recipe: no bacon, used smoked gruyere (smokey bacon flavor was perfect, used medium cheddar and added extra to make up for no blue cheese. Used half the salt (recipe seemed salty once before. Utterly creamy. I wonder if those who found it not creamy enough might have left the heat on after adding the cheeses, and caused it to begin separating. I worried it might not thicken enough, but it was perfect.

Absolutely incredible. If you do it right you will not be let down. Do not use low quality ingredients or you will not get the same results. I buy organic and fresh. It pays off. Thank you Ina for another top recipe. My kids will be demanding this often.

The recipe was pretty easy to follow, but the Gruyere cheese was kinda pricey. It came out nice and was a good for two meal but could also feed alot. Was very tasty and would do again.
