Well for 625 calories per serving; 43 gm fat it is a once in a while dish for me. I used 1% milk and 4 slices of bacon - it turned out fine. I may next time add brocoli florets or peas.

Delicious! I read the comments and chose to taste as I went so I was able to decide that yes we will like more of this or no not so much of that. It turned out with such depth of flavor. I forgot the bacon when I went to the store and it turned out so well and had a hint of smokiness to it that the next time I make this I will leave it out for sure. Also, I happen to have Gorgonzola and not blue and it was great. I will absolutely make this next time I have company.

I am not a macaroni and cheese lover, but when I made this, WOW!.....I now make enough so I can freeze the extra and have it again without having to do all the prep work....great meal for gals who work all day.

It was excellent. I loved the bleu cheese in it. I backed off the amount of gruyere cheese a bit. I also cut the recipe in half and still had tons leftover.

Awesome dish! Perfect blend of cheeses. I like this best with the Cavatappi pasta. Dirties a lot of dishes but sooooo worth it. Dish tastes and looks great. I have a picture of it on my site.

We decided to make this last minute and with a few substitutions: Turkey bacon, organic tri-color spiral pasta, and gorgonzola. It was amaaaazingly delicious! The only reason I gave it four stars is because I cooked it for only 30 minutes (and I have no oven temp problems, and I'm glad I didn't leave it longer - it may have dried out too much. Also, I would use only about half the amount of bacon next time. Otherwise, I am a new fan of Barefoot Contessa! This and her roasted tomatoes caprese are so good! I can't wait to try a new recipe...

I'm not a huge fan of bleu cheese but Shorshire has a mild and creamy cheesy flavor that I adore. Raquefort is too intense for my palette. But overall this is a great dish!

well ina, you have done it again. my partner and i love mac and cheese. i must have tried over 20 recipes, and none really did the trick. either they were too dry, too bland, not enough cheese, etc. i made this recipe last night, and it's the best mac and cheese we ever had. i followed the recipe to the letter, and it was perfect! creamy, cheesy, with a yummy crunchy topping. love the mix of the different cheeses. they work well together. this will be my ONLY recipe for mac and cheese. ina, you never let me down. my partner and i just love you! keep the great food coming! thank you!!!
