This was really good. More so than I thought it would be for a simple little salad. We wanted to double the salad dressing to use some for dinner tomorrow, so we did the following: Just shy of 1/2 cup lime juice, 1/2 cup olive oil, 2.5 tsp kosher salt, 1 tsp pepper, 3 cloves of garlic, 1/4 tsp cayenne, and then we added (for personal preferences1/4 smoked paprika, 1/4 tsp cumin, 1/8 cup sweet 25 yr old balsamic and 1 tsp sugar. The balsamic and sugar really took the slight bitterness away and gave it more of a vinegary tangy taste.
Other than that, we made the rest to recipe. It was great. This would be so good with some rice, grilled and marinated harissa steak (cut into cubes and put in a wrap.
I recommend this, as it is really easy, fairly quick and creates a very versatile dish. Try this and you will thank Ina. :

I love making this salad for pot luck dinners during the warm months. Everyone always loves it and it's perfect because you don't have to worry about any mayo going bad while the food sits out. Ina is amazing!

What a delicious salad! I used regular chopped tomatoes instead of cherry ones and my jalepeno was yuck inside so it got left out. In it's place I coarsely chopped a nice handful of cilantro. This was a cross between the freshest guacamole you've ever had and the freshest salsa you've ever had. This will be making a regular appearance on my table.

Wow! This is AMAZING! I've made several times and use either lemon OR lime (whatever I have on hand....either work great!. I also add two cans of black beans instead of one. I sometimes make the day ahead - even chopping up the avocado! I simply don't mix all the ingredients in advance. I put the chopped avocado in the very bottom of the bowl, sprinkler a little lemon or lime juice over and then pour all the dressing on top....this keeps the avocado from darkening. Then I layer all other ingredients on top, and toss when I'm ready to serve. THIS SALAD IS VERY DELICIOUS!

This salad is amazing! I used cilantro instead of the jalapeno and I used only 1/8C of oil instead of the 1/4C. Delicious and healthy. I have made it two times for friends in the last 3 days and everyone loved it!

I LOVE this recipe. I usually leave out the jalapenos just because I don't feel like dealing with wearing plastic bags on my hands to cut them, but this salad is so flavorful and healthy. It's great the next day too. I sometimes serve this as a side to chicken fajitas.

This is one of my favorite salads. I do however use less lime juice and add cilantro. I sometimes cut the tomatoes & bell pepper smaller like a chunky salsa and eat it with chips. Everyone who has ever tried it LOVES it. Beautiful colors for a pot luck and so much flavor!
