I make these at Christmas time to give to my family. The flavor and texture are divine! If you love truffles you will be amazed at how easy it is to make your own.

Perfect! I used these in my Christmas gift baskets. So easy & so yummy! I had to leave the mixture in the refrigerator about 10 extra minutes because it was still a little too runny after 15 minutes. I had a hard time getting the hazelnuts to really stick to the truffles, so I think next time I'll just place one or two pieces of hazelnut on top of the truffles. My mother-in-law loved these!

just like with Ina's other truffles these turned into chocolate frosting as well. This never did set right and the mix was too gooey to work with. another disappointment.

Good but I used rum and rolled half in sweetened cocoa powder and the other half in finely chopped toffee bits. One could use all semi-sweet chocolate for a sweeter truffle and omit the coffee (replace with additional rum!. I am making a bunch of these for Christmas gifts this year!

They almost look like Rochers, except its a bit more on the bitter side. I am definitely going with milk chocolate next time or less bittersweet.
So its valentines day (sunday and im making these after a long 12 hour grave yard shift. Liquor store doesnt open until 3pm, and I wanted these to set while I was sleeping,
So I used some Kaluha that I had. Only a tablespoon though and it was deeeeeeeeeeelish.
For those with the consistency issues, are u using a measuring cup and hard chocolate? I really dont understand how youre getting mush,

I also came out with a big bowl of chocolate goo. Delicious chocolate goo, but I'm not sure what to do with it to make it set up - it's been 2 days in the fridge. I would hate to waste all the $$ spent on chocolate, Frangelico, Hazelnits, etc. I have purchased more chocolate, but I don't know quite how to melt it all together. Anyone have any suggestions???

I brought the cream to a simmer, like the show said and NOT a boil, also like the show said and the chocolate melted beautifully.
It did take 2 hours in the fridge before mine got firm enough to roll into balls.
They are going to make wonderful gifts - IF I can keep myself from eating them.
I'm thinking that the varying results might have to do with the different kinds of chocolate used.
Two thumbs up, but please fix the recipe.

I made different variations with this recipe and people thought they were great. Their favorite was a truffle that I powdered it with dark cocoa powder.
