    I have never made truffles before...and I really don't spen much time in the kitchen. But, these were so simple and everyone loved them!!! But be careful....they are incredibly rich!

    I'm making these truffles for everyone this season; work, friends, family. I've made 3 batches already, and have ingredients for one more. I only did the nuts one time, and then started shaking the truffles in cocoa, which is MUCH easier, and theyre delicious that way. I also used 4 oz Ghirardeli choc bars, so increased the cream by 2T and it worked fine.

    I ended up with something more like chocolatey glue. What a waste of good chocolate, and my money. My guess is that the web-version of the recipe calls for way too much cream. I am usually a big fan of Ina, but this recipe was a dud.

    I found these to be more difficult than I had expected, but well worth it. I used a little more semi-sweet chocolate than the recipe called for, and covered them with cocoa powder b/c I needed to store them for a few days & I didn't want soggy hazelnuts. The end product was FANTASTIC!

    It was difficult to find a good chocolate to melt but I did and the truffles were so decadent and rich.

    I couldnt get the chocolate to set, plus the recipie on the internet is difrent than the one on show.

    i was inspired that something so rich could be made so seemingly easily. You really can't make large batches for the holiday all at once; The choclate doesn't cool right. When you try to roll in the hazelnuts, the nuts did not stick to the choclate as nicely as they did on TV. All in all, the flavor is nice and rich, but these are not as easy and not as pretty as I would have liked.
