OMG! This was wonderful! Moist,flavorful. We will make this again. For the reviewer who said it was bland back in November, I have a thought. We have fish a lot, and I love fish, but I cannot stand cod. I think it is bland and bad tasting. I've tried it many times, but it never gets better. Even breaded and fried, it tastes bland! If you used cod, maybe that's it. I used grouper tonight, but tilapia, snapper, or pollack would be good.

First of all, I never prepare fish for my family, but I will now! This recipe will be a staple in my home....every week! Wow! Thanks, Ina! Everyone loved it, and it is healthy and extremely delicious! I used Chilean Sea Bass since that is the only fish option the store had. Sea bass is a bit pricey, so I hope my family enjoys the less expensive options just as much. I used about 5 pitted kalamata olives per serving since I had them on hand and they were really yummy.

:( I'm not sure why, after reading all the rave reviews, I followed the recipe, but the fish had no flavor. I don't even understand how it could be so flavorless with lemon, olive oil, olives, and fresh thyme! The recipe sounds delicious, and all of the other reviews said so.... I haven't a clue. :( Ina's one of my favorites!

This is absolutely wonderful. Ina does it again! I used halibut and it came out perfect. Like some of the other reviewers mentioned, there was water on the bottom of the parchment paper after it cooked, so I won't serve it in the parchment next time. But the flavor of this is just amazing! This recipe will definitely be a new staple in our home.

Another home run for Ina! I used tilapia instead of cod (my Whole Foods had a very slim fish selection that day ..., but it turned out beautifully. The only part I had a bit of trouble with was wrapping it in the parchment paper. I couldn't keep mine closed! I served it with the polenta and celery salad from the same episode. Such an elegant, simple meal!

Perfect way to cook fish. I use whatever fresh herbs and olives I have on hand. Can make salmon for me and cod for my husband and have done so. Making this tonight for the 3rd time already. Sometimes I add a splash of white wine, if that's what we are drinking. Don't need the egg wash to seal the parchment paper, just fold it, maybe dab a touch of water if you want. Great make ahead dish, I prepare uncooked fish early in the day and just throw in the oven before dinner.

I used tilapia! It was delicious....i added 1 spear of Mediterranean pickles with the fish alongside the olives....it was superb....however i could not fold the parchment paper the way Ina did.
