I've made this recipe at least twice now and it really is delicious! I let mine sit in the vinaigrette for about 25 minutes before I cooked them and then after I took them out of the oven I put them back in for about 10 minutes. Absolutely delicious and I will definitely make theses again!

I would give these 10 stars if I could. Made the recipe exactly as written and OMG, these are to die for. Will make these again and again. I served them along side filet mignon with bearnaise sauce and it was the best meal I've ever cooked.

If you are on the fence about this one, just do it. They truly are incredible. Plus, the darker they look, the more delicious! Fail proof. Impressive, memorable, and versatile!

I was a little weary about this recipe at first but decided to give it a try anyway. It turned out AMAZING! A true keeper. I used one red onion and one zucchini, followed the recipe to a 't' and it was delicious. I will make this again and again. It's super snazzy and perfect to show off for company.

I love you Ina! I stumbled on this by accident. I wanted to roast both mushroom caps and onions. Was just looking for the roasting time difference. Ended up starting the onions 20 minutes early then adding the mushrooms and roasting an additional 25 minutes. The onions were "to die for crazy good", the mushrooms equally excellent. Can't wait to try it on other veggies. I thought the leftovers would be fantastic tossed into scrambled eggs, but there were no leftovers. I ate them like candy while doing the dishes. I urge you all. If you like onions, you HAVE to try this. If you don't think you like onions, try it and you very may well change your mind. If you are allergic to onions (sob, try this marinade on other veggies. I am so glad I found this recipe.

It was amazing!! Probably one of the best recipes I have done and I will try to incoroporate this as a side dish more often. I was a little nervous about just eating onions but they were sooo good!

Excellent side dish. Quick, easy, can do all the prep work ahead. We put the onions in a plastic bag with the dressing. Closed bag and moved the onions around with the dressing until all was coated. When time to roast we poured the onions in a collander and captured the dressing in a bowl to use later. Super easy! We had some cooked onions left over so tonight it's hamburgers dressed with these onions. Oh yes!!!

Very good. So nice to roast a different veggie. Served with fish, probably not the best idea. Need a heartier meal. Will definately do as a side with steak next time. Made a few hours in advance and just reheated in microwave to take the chill off.
