WOW! All I can say is wow. It was so easy to make and just so yummy! For the herbs I used Chives, Parsley, and Basil since I am not a fan of dill and I thought the scallions might overpower it. I was really happy with the herb combo I chose, it really let the cheese shine. I'll never buy store-bought ricotta again!

Made the recipe exactly as written....it was delicious! I can't wait to make it for company. Homemade ricotta is simply divine, and so easy to make. Don't think I will ever use store bought for this recipe. Yummy, yummy bruschetta!

Outstanding Ida! I was intimated to make my own ricotta, but like all your recipes, it was simple and easy. I will never buy ricotta again. Please, more recipes using your fresh cheeses. Thank you!

This was so fun and DELICIOUS to make, and it didn't take long at all. Even just the plain ricotta was the BEST plain ricotta I've ever tasted. So fresh and it just melts in your mouth. I'll never buy it again - it's homemade ricotta or bust! Adding the herbs and eating it with a garlic toast puts it up on my #1 yummy list! I just had to think of something to do with the leftover whey and came up with my own Cream of Roasted Asparagus and Potato Soup. Hot or cold, it's also amazing! Ina, let me know if you want me to demonstrate this "whey awesome soup" recipe on your show!! Kidding?.....Not!

Loved it! It took longer to drain than 1 hour and was still very soft and wet. I pretty much ate the whole batch myself over about 3 days. Will definitely make again, especially to wow guests!

Great recipe! It was far better than store-bought ricotta. The recipe was a little salty for my taste, so on my second try, I used half the salt. It was even better!

Who knew it was so easy to make cheese??! I just made the dill and chive ricotta and it is wonderful warm. In fact, tomorrow's guests may never know what it tastes like! I do agree with Ina in that I will let it sit for 45-60 min. next time in order to have a firmer cheese. This recipe will be a regular one around this house!
