Perfect. Utterly Perfect. Thank you, Ina. I omitted the sugar and butter because both were unnecessary! Used zest and juice from one orange. I use this recipe throughout the year with apples that become old or soft. I don't measure a thing. Fill the pot with apples, add zest, juice and spices...if I have them all. I don't even mix it! Any apple flavor or color or combination is terrific. Have used with and without the peel for coloring...all looks the same to me. Delicious!

I've always been intimidated at the thought of making my own applesauce, but after aquiring bags of fuji apples from a co-worker I figured it was about time! All i can say is WOW. My family loved it! The only modifications I made were only fuji apples, 2 clementine oranges with zest from one, and only 1/2 a lemon with zest. I still think it had a very citrus taste, but yummy. I may cut back the butter next time, as it made it somewhat rich and I think it would be fabulous without the added fat.

Good method. I like the flavor and texture. I would definitely cut the two oranges to one (even with only one, it's VERY citrusy and next time, I will cut the cinnamon. It's a little too strong for my tastes. Still, I was looking for a recipe that would make a yummy, chunky-style apple sauce that was better than what you get store-bought, and this definitely qualifies.

Oh my God Ina. The best I have ever tasted. You should get 5 stars on this one. Thank you so much for a wonderful apple sauce for my roasted pork.

That was SO GOOD!!!!!!!! I was interested in trying her "baked" apple sauce instead of the typical method. I only used 1 orange instead of 2, as sometimes her citrus use can be a bit much. I could still really taste the citrus but it was perfect. Everyone raved about it and I got requests for the recipe. The only thing I might change in the future would be reducing the cinnamon just slightly. It was very strong. I served it with her roast pork which was devine, but it was also SO good on its own. Thanks Ina!

After watching Ina make this applesauce on the telly, the spousal unit agreed to buy me a new dutch oven if I would make it the next evening. So, on my lime green Chantel dutch oven's maiden voyage, she cooked (perfectly, I might add this recipe. Her new owner followed the directions exactly, and said spousal unit was mighty happy! I must devise other plans to purchase more necessary culinary basics. And it's not even Christmas! We had lots leftover, so I am attempting to keep it in the fridge for a few days. Pork chops tonight??

I just finished making this applesauce from our first Hudson Valley McIntosh apples this season (+ the Granny Smiths. So flavorful! This has become my go-to recipe for applesauce. We cut down on the butter (to 6T and add the juice/zest of an extra lemon so it isn't so sweet. We tried both zester and grater, and found the zest pieces too big with the grater. We stir along the way so we have some small chunks of apple in the sauce at the end for visual attraction instead of whisking smooth. Had good luck with Courtlands and N Spys right off the tree also. So easy to make after apple picking...fun to do with kids. Not your traditional sauce! Hope you enjoy as much as we do.
