I'm not sure if my problem was that my crockpot that I put it in to keep warm ended up continuing to cook it (it was actually bubbling when I realized, but it came out too strong for me. My guests liked it but said it's more of a sauce rather than gravy. It was my first time making gravy and I think I cooked it down to the thickness that I wanted, but it continued to thicken afterwards. I usually love onions but I'll look for another recipe.

This was absolutely worth the little bit of extra effort. It is the best gravy I have ever eaten, and I thought my mother's was the best!

I have NEVER made gravy before, so I was slightly intimidated, until I saw Ina's recipe. This was so easy and perfect!!! Everyone loved it, including my husband who doesn't really like onions. I would say that the only thing I might do differently next time is cut the onions a little smaller than chopped, I think I'll dice them. Anyway, this recipe is most definitely going into the "thanksgiving label' in my recipe box! Thx Ina.

I'm not usually a fan of gravy but knew I had to serve it on Thanksgiving!. This recipe is simple and really enhanced the flavor of the meat and other side dishes. I used part butter and part pan drippings and did include the cream, wine and cognac. I followed the suggestion of other reviewers here and finished it by blending it with a hand-held blender. I doubled the recipe to serve 18 people(also cooked 2 12ib. turkeys using Ina's recipe. I will absolutely make this the next time I have to make gravy.

I ended up straining the onions out of the gravy, and it was delicious!

Didn't have cognac/brandy, so used a splash of bourbon and omitted the wine. Imparted a sweet/"bready" taste. I loved it, dear wife didn't because of the "sweet" taste from the bourbon, kind of overpowered the "roasty" taste. Perhaps cognac wouldn't do that.

There is no way I could've done this whilst preparing a big Thanksgiving dinner, kind of a fussy/time-consuming recipe. Thank goodness I did it the night before. Since this was "pre-drippings" prep, I followed the advice of an earlier post-er and baked around 6 turkey drumsticks ($7 +/- to obtain drippings.

Also, based on advice of previous posts, I food-processed the onion mixture.

Bottomline: OMG, it's reeeeeeaallly good, but I'll omit the liquor next time to preserve the pure roasted turkey taste.

My husband and I just made this gravy for our early Thanksgiving. In past years, there is always gravy leftover. Family was all but licking the gravy bowl this year! THANK YOU, Ina Gartner!
