Ina, you did it again. Your recipe for homemade gravy is excellent!! I just finished making your gravy, and all I can say is WOW. I had some left over roast chicken which was also your receipe for my Sunday dinner -- another WOW. So, together what a great mix. You are the best, and I enjoy all of your programs and, I am learning so much from you. All I can say is THANK YOU!!

This recipe is a hit at our house every time I make it! The cognac is key to the wonderful rich flavor. Thanks Ina. You make cooking look so easy and elegant.

I HATE onions, but totally trusted Ina's recipes. I made this gravy for the first time making my first Thanksgiving dinner. I couldnt believe how great this came out! So easy to make and a taste that beats any gravy I've ever had before. I did the onions just as it calls in the recipe, but once they were done I picked them out (hold the onions at the top with tongs, tilt the pan so the butter runs down, then pick out the onions. Totally worth the extra work. I also added the drippings from the turkey in with the chicken stock totalling what is called for in the recipe. PERFECT! I now keep onions around my kitchen just in case I decide to make bread. I'd eat just bread, butter and this gravy!! Try this! You wont need another gravy recipe!!

This gravy is by far the most delicious I have ever tried. I like to stir in tiny bites of cooked chicken liver or mushrooms and it is just fabulous.

This is the best gravy I've ever made. I always used drippings from the Thanksgiving turkey, I made this the night before and it was absolutely wonderful. Received many compliments, thanks Ina!

This gravy was absolutely delicious. I made it for my family for our Thanksgiving dinner and they all raved about it! I wanted to make it ahead, so I didn't use turkey drippings. I also used an immersion blender to smooth out the onion chunks. Thank you Ina!

I made this gravy this Thanksgiving. The only changes I made were, I used some of the herbs from her turkey breast recipe, and put them in the bottom of the pan while my turkey was cooking. Then, about 3/4 of the way through turkey roasting, I put diced carrots, celery and whole garlic cloves in the bottom of the pan. Then I strained this, and used as my liquid and followed the rest of Ina's steps, minus the onions, (I cant eat them. It was the most flavorful, richest gravy anyone had ever tasted! Ina, you never fail to provide the best recipes when it really counts. I owe all of my kitchen greats to you!

I am also taking gravy for Thanksgiving and just finished making Tyler Florence's Roasted Chicken Jus to use as a substitute for turkey drippings (I'll sneak some in when I get there! The recipe has tons of flavor and is fast and easy to prepare. I doubled it and will do the same for Ina's gravy that I'm going to start right now and freeze.Hope this helps you. Happy Thanksgiving!!

You can definately make the recipe with just stock OR you can always throw a few turkey legs in the oven and take the drippings from there. Since you can make gravy ahead you can just freeze it for thanksgiving.
