This is the bomb-diggity-bomb of gravies. Start the onions early in the day and let them just sit around till you're ready for them. They take a very long time to cook and who wants to be stirring onions at the last minute? Make sure you get them nice and brown. Also, don't forget the cognac (I did last Thanksgiving and it just wasn't "right".

Wow, this gravy is amazing! The onions really do add so much flavor! Thanks, Ina, I took your suggestion from the show and made the gravy and cranberry sauce ahead of time. I'll just reheat the gravy before dinner. This recipe is my new favorite gravy recipe! Don't rush the onions!

I am only rating this a four, because I have issues with the directions.
In the video, it calls for 2 cups of onions and for more pepper. I guess it doesn't make a difference; I used the recipe as posted and it was great. I was not happy with the cooking time on the directions. I had to cook my onions for 45 - 50 minutes! (I even looked online how to carmelize onions, to make sure I wasn't doing something wrong. I also feel the cooking time at the end is too short. I had to cook it about 12 minutes.
I just don't want anyone to be surprised if they are making this on Thanksgiving, because timing is everything on that day! But the gravy is excellent!

This was the best gravy I have ever made. I have tried another one that just could not compare. Ina is the greatest. I did not add the cognac it was still full of flavor. I also used low sodium beef broth. The long cooking of the onions have to be the key they were delicious. I did not add the cream to many calories.

i made this gravy for thanksgiving and it was the best gravy i have ever had. i added about a half a cup of turky drippings and a tablespoon of white wine in addition to the brandy. it was full of flavor.

I use this recipe today with pork chops for dinner. It was so yummy. Only thing I added were parsley flakes and garlic salt. Replaced chicken broth with beef and used a capful of brandy extract instead of using cognac. Its a great recipe for beginner! I am horrible at making sauces and gravies and it came out so perfect. Do brown the onions all the way has an awesome flavor no spice could come close too! This recipe is going in my recipe box!

This gravy was delicious! Also so easy! I'm so glad to finally have a wonderful gravy recipe when I don't have the drippings on hand. I used half and half instead of heavy cream to lessen the fat, and it made no difference in the flavor.... Thanks Ina, as usual, a winner!

I made this for Thanksgiving and it was a huge hit. The cognac added depth of flavor. Another great recipe from Ina!
