I made this for Thanksgiving and it was a huge hit. The cognac added depth of flavor. Another great recipe from Ina!

This recipe is super easy and it held up well when making it ahead (lay a piece of plastic wrap over the top to avoid a "skin" from forming, but do not forget to discard. Just reheat on simmer before serving. I used Christian Brothers Brandy VS instead of the Cognac and homemade turkey stock. On the downside, the onion was overpowering and this is with reducing the quantity to one cup and adding the heavy cream and chopped turkey neck meat and giblets. Doubtful I will make again.
