Wow, these are wonderful and so easy to make. Cut the marshmellows up and put into small cupcake holders and brought to work. They were fighting over who go the last one!!!

i made these for the 4th of July. . . i recently saw a Paula Dean episode where her guest made "smores on a stick" with homemade marshmallows (his recipe included whipped egg whites .. . i decided to try side by side marshmallow recipes. . . The Ina Garten recipe was soooo much better than the other recipe. . . i think it was the texture and perhaps the dash of salt she included. . At any rate i loved them (threw the others away but i put them on a stick, dipped in melted milk chocolate, and rolled in graham cracker crumbs. . . however in borrowing a Barefoot contessa twist, i bought a wonderful "caramel chocolate" and next time will dip my "smores" in that chocolate and roll them in toasted coconut. . . nummmmm!

I made a smores pie with 8 ounces of them melted in 1/2 milk 2 ounces of semisweet bakers choc. shaves or chopped well. mix till melted and 1 cup of heavy cream whipped..fold into mixture and put in gram cracker crust chill for a few hours in refrig. Incredibly easy and tasty! I added these to holiday cookie bags - super festive and unique! Definitely need the candy thermometer, would have been lost without it - enjoy!

You won't see me at the store buying marshmallows again. These are amazing! I love the airiness and the flavor. They are a little sticky and tough to work with, but it's all fun and worth it in the end. I had a little trouble getting them to set up because I'm in South Carolina and it's so humid. But I just fought through it and improvised. It was worth it!

They do taste good. It is SUPER STICKY and messy getting it out of the mixer. Maybe i mixed it for too long cuz I think the texture Ina had was different than mine. Hard for me to eat one because it's so sweet!!!! But if you LOVE LOVE marshmallows, try this recipe!!
