I never used a meatloaf recipe - always winged it on my own. I watched the episode this recipe was introduced and for some reason decided to try. Wow, my husband and I really do like it. Instead of him suggesting meatloaf once a month it's every week now. I didn't alter a thing.

I had high hopes when I made these meatloaves last night, but was disappointed in the texture and taste of them. They didn't hold together very well and the onions were 'slimy' in texture. They were very moist and light, but didn't like them overall.

I decided to surprise my husband by making meatloaf. I have NEVER really been a big fan of it, but I decided to do a search on FN to find a popular recipe. Anytime I have made one of Ina's recipes, I have not been disappointed. I made yet another successful recipe tonight, courtesy of Ina.
I would not change a thing. However, ground chuck has enough fat in it that you could do a 50/50 mix of ground chuck & ground sirloin. I did my homework and read the ratings before making it. I knew that a fair amount of fat would cook out of the meat and end up on the pan.
The only other thing I did differently (because I didn't feel like buying a dozen extra large eggs to use two was use 3 large eggs instead. It worked out fine. I made the six individual loaves that the recipe recommended and my husband LOVED it. So much so, that I had to convince him to not eat three so we would have enough leftover for another meal.
GREAT recipe Ina. Keep em coming.

I have searched high and low for a meatlof recipe that I actually like and finally found this one! The only change I made was to decrease the onions by just a little and it was still tasted wonderful. I made two larger loaves, but next time I will make the smaller ones and freeze a few for other meals. Another winner Ina!!

I am not meatloaf person, but I loved this. I only used 2lbs of meat. It was moist and yummy. It still made 6. I froze the other 4 and used them for no fuss week night meals. Recommended to all skeptics...YOU WILL LOVE THIS!

Made this meatloaf twice already and everyone loves it. Even my daughter, who doesn't like meatloaf, gave it a thumb's up. Make sure you place the little loaves on a rack that drains because if you use meat that is 80/20 there is plenty of fat to drain. Great flavor and could easily be made for company without feeling you are serving just "plain" meatloaf. Give it a try- you will not be disappointed.

I watched you one rainy day a couple of weeks ago make this for your friends that were fixing the lighthouse, and I had all the ingredients so I made it for dinner. It was delicious, my son said it was the best meatloaf he ever had! It is my new recipe for meat loaf! Thank you Ina.
