I make this recipe on weeknights when I need dinner on the table fairly quickly. My family loves them, and it's one of my two year old's favorite meals. In fact, this is one of the only meals he will eat in its entirety at this point! The loaves are moist and very flavorful, better than any mix or packet. We love these loaves! :

I have the most wonderful neighbors, they have been like parents to me
for 33 years. They are now elderly and don't get out much, so for their
61st anniversary, I made them these delicious meatloves. It was a big
hit, of course they only ate half and saved the rest for the next day.
Being that the meatloaves were individual size it was more special and
personable. We ate on nice china, and had the best time and
laughs. My daughter and I enjoy making many of your recipes!
Thank you and keep on cooking!

I've seen meatloaf recipes that go overboard with ingredients. This meatloaf is simple and complete. I love that it works with oatmeal, fresh or dry breadcrumbs, (yes, i've tried them turned out great!! and it always turns out perfect!

When beef is ground from a specific cut, it may carry the name of the cut, as "ground chuck," which is approximately 80% lean. Beef ground from less tender cuts, is labeled "ground beef," which is approximately 75% lean. Ground chuck makes excellent, lean hamburgers, meat loaves, meatballs, pasta meat sauces, and any dishes which contain ingredients such as bread crumbs or noodles to absorb the fat as it cooks out.

This is a fantastic meatloaf! Very good flavor and even better as leftover meatloaf sandwiches!

Instead of individual loaves I used a muffin tin to make even smaller portions. They were so moist and had great flavor. Next time I might use oatmeal instead of breadcrumbs because this has worked for me in the past. WONDERFUL recipe!

My wife and I have tried them all, and this one is the best hands down, bar none!! The second time I made it I didn't have chicken broth so I used beef broth and it came out EVEN BETTER!!! The beef broth added a richness that put this meatloaf even higher on the greatness scale. Serve it with Tyler's mashed parsnips and you will be crowned a meatloaf master.
