Ingredients

  • 1 cup honey
  • 3/4 cup soy sauce
  • 1/4 cup minced garlic (8 to 12 cloves)
  • 1/2 cup peeled and grated fresh ginger root
  • 2 (3 1/2 pound) chickens, quartered, with backs removed

Directions

Cook the honey, soy sauce, garlic, and ginger root in a small saucepan over low heat until the honey is melted. Arrange the chicken in 1 layer in a shallow baking pan, skin side down, and pour on the sauce. Cover the pan tightly with aluminum foil. Marinate overnight in the refrigerator.

Preheat the oven to 350 degrees F.

Place the baking pan in the oven and bake for 30 minutes. Uncover the pan, turn the chicken skin side up, and raise the temperature to 375 degrees F. Continue baking for 30 minutes or until the juices run clear when you cut between a leg and thigh and the sauce is a rich, dark brown.

    This recipe looked so simple, I couldn't resist trying it. You need to plan in advance just a little if you want to... marinate it overnight. I marinated it in a 9 x13 Pyrex pan, so it went straight from the fridge to the oven the next night. Doesn't get easier than that! I did grate fresh ginger, but used minced garlic from a jar, and made only packaged chicken breasts and legs. My teenage son and I loved it, and yes, I also saved the sauce from the pan, as it would be great over mashed potatoes or rice, even on another night with a different meat. Love the other reader's suggestion for using this marinade with salmon; that will be next! Thanks, Ina! Read more

    I made this for a girlfriend and I last night, along with the other recipes from this episode (Basmati rice and roasted... carrots) and this was an incredible meal!! Honestly, I did not have very high expectations for this recipe, but I was pleasantly suprised at how flavorful this was! I only marinated for 1-2 hours and have no doubt the flavor would have been much better if marinated properly! Also, I will probably not cook as long as the recipe calls for next time. I used chicken breasts, since my husband does not eat chicken with a bone (crazy, I know) and it was a little overdone for my tastes, but the flavor was still soooo good! Two thumbs way up!!Read more

    Nice Recipe - Same as Marinated Soy-Vay Chicken

    Our family enjoyed this dish, but not sure it was any better than marinating chicken in Soy-Vay (a store marinate of soy... sauce and teriyaki sauce). Check the chicken temperature 5 minutes before the recommended cooking time expires to avoid over-cooking the breast meat.Read more
