    This is a great recipe. The flavor really works well with the swordfish. I marinated the fish for 3 hours and that was enough time. I grilled for 5-6 mins/side over a hot gas grill (400-450 degrees. I don't know what the mini processor used on the show was, but I have a Cuisinart mini processor that's great. I know a lot of people who have it and use it all the time for small kitchen jobs. You can get it at Bed Bath, Macy's, etc. for about $40, less with a coupon.

    Ok, I admit I did not use swordfish, I marinated pork chops and chicken breasts b/c it's what I had. I did it overnight and I have NEVER had a porkchop that tasted so soft. It totally tenderized it. The chicken was just as wonderful. For fish you could NOT marinate overnight b/c it tenderizes so much but it was great. The only downside is it didn't make awesome grill marks that I like b/c the marinade is such a wet one. This is a top 10 recipe for me though. I will definitely try it with fish too and so easy.

    I have been making this marinade for years, even before the Food Network. What makes this marinade so wonderful is that it can be adapted and changed based on what you have on hand I often use orange juce and zest as well as pineapple juice. Ginger gives this marinade a very distinct flavor but if none is available, it's just as good without.

    The marinade is great, but the lemon juice WILL "cook" the fish and lose the texture if you leave the fish in there for too long. but if you must do it ahead, then add the Lemon juice later, otherwise two hours is pretty enough for fish, could be longer for the chicken.

    Marinade is excellent. As a professional chef and avid off shore fisherman we shy away from this bill fish because of the pressure being put on the species by commercial, irresponsible fishing. Shame, because this is a wonderful fish. But others and chicken work great with this marinade!

    Loved the recipe. I didn't think sword fish was supposed to be good eating. This recipe put the ca-bash on that theory>

    But since we like a little less of the strong ginger flavor, I also added a bit of honey and a bit of Sriracha sauce for a little bit of heat. I used it on pork chops.
