I have made this Irish bread two times. I omit the orange zest and add 2 tbsp of coarse cut orange marmalade instead. This is the most wonderful and easy to make irish bread I have ever had! My whole family loves it!

I do not want to be one of those reviewers who gives a recipe five stars and then goes on to tell how they changed the recipe - I never change Ina's recipes. But, for this one I thought that as long as I had the orange that I zested, why not use a couple of teaspoons of the juice to plump the currants (I definitely used currants and not raisins. Currants are traditional.
I used 1/2 cup currants and 1/2 cup golden raisins (for color. I also did an egg wash all over the top of the bread before baking.
I was going to be magnanimous and share with neighbors because it makes a large bread; but, I didn't. The cross in the top of the bread made it possible for me to cut the bread into 4 pieces. I just put each piece in a freezer bag and popped in the freezer.
Now, I can have this bread whenever I want.

Ina's Irish Soda Bread would make a delicious breakfast or bread pudding. Even if you are uncertain about the orange zest, add a little bit. It gave the bread a wonderful scent and freshness. I only baked mine for 45 minutes but it was a little under-done. Next time I will go for 50 minutes.

A TRUE IRISH SODA BREAD.......MAYBE MINUS THE ORANGE ZEST, WHICH I DIDN'T ADD. SO GOOD, SO EASY, SO QUICK! WE HAVE BEEN EATING IT FOR 3 DAYS...........TOASTED IN THE MORNING WITH BUTTER AND 2 DAYS JUST BUTTERED TO GO WITH BIG BOWLS OF HOMEADE HAM AND CABBAGE SOUP...........MMMMMMMMMMMM! MY VERY IRISH HUSBAND [16 SIBLINGS IRISH] LOVED IT EVEN THOUGH HE REALLY DOESN'T LIKE MIXING SAVORY WITH SWEET [CURRANTS IN BREAD, ETC.] THIS WILL BE A JOY TO PRESENT TO HIS SISTERS @ A SUNDAY BRUNCH! This is a fantastic recipe for a semi-hearty, semi-sweet loaf of goodness. It's especially great for a snack or dessert, and has become a staple in my house. It's also much cheaper to bake this than to buy cakes and cookies.
I found the orange zest to be more optional than necessary. The currants are absolutely perfect. My twist is to add a tablespoon of honey to the wet ingredients. The honey brings a body and sweetness that adds a wonderful flavor to the whole loaf.
A couple of other notes. 1 Instead of buttermilk, I use the "urban myth substitute" -- 1 tablespoon lemon juice to 1 cup milk. It works fine. 2 I found the 1 3/4 cup wet ingredients needed to vary slightly. Creating the "perfect loaf" was a matter of adding just the right amount of liquid to form the perfect dough consistency. THEN the bread was perfect, baked for exactly 55 minutes.

I tried this recipe today and it came out delicious! My husband and I love Irish Soda bread and neither of us are Irish. I saw Ina make this the other day and it looked easy. I have tried other recipes with no success. But this one was so easy I really thought I did something wrong and it wasn't going to come out right, it did and it was fantastic.

Ina, you've done it again! I made this recipe for my husband to have as toast in the morning with his eggs, instead of his sandwich bread, and I've got to say, it's fabulous! I had to make it gluten free, as he has celiac sprue, and it's another winner. I love the orange zest, it really kicks up the flavor. Thank you!!!! Ina, you've made me such a better cook and my family just doesn't realize how lucky they are!! haha

Never baked any kind of bread before. Easy, delicious and a real ego booster!
I left out currants and zest, still perfect!
