    I make this recipe exclusively for Irish Soda Bread. It comes out perfectly. I've even figured out that 560 grams of A-P flour is my four cups. Yes, batter is sticky, but that's b/c dry batter yields dry bread. This is moist and delish. Flour your hands and show the dough who's boss--form it on the baking sheet and don't fret. It looks somewhat shaggy at first, but it springs up and fills out in the oven. Good toasted and buttered. SO simple & fast to make, no yeast, no rising...moist and delicious!

    I wanted to try Irish Soda bread for St. Patrick's Day so I thought I would try this recipe. I have Ina's cookbook that contains this recipe. It was fantastic! Very easy to make, very good flavor.I found the Sun Maid currants at a local grocery store. I served this along with Shepherd's Pie for dinner. Great lightly toasted with butter. Will be making this again!

    Fantastic soda bread recipe! First time I've made soda bread, and mine turned out beautiful and delicious even though I didn't cut the cross into the top of the bread. Everyone loved it. Next time I'll substitute chopped dried apricots and grated lemon peel for a springtime twist...hmm maybe for Easter.

    Brought this to a potluck Irish-Polish dinner and everyone said it was the best Irish Soda bread they ever had. I did add 1 tsp. baking powder and 2 tbsp. caraway seed, so it would be authentic. The bread was very wet, and I had to use quite of bit of flour to manage it before placing on the pan. Mine also came out not as high as shown, and I am wondering if 1/4 or 1/2 cup less buttermilk might do the trick?

    I can only echo ... word for word the three prior reviews. I, too, have been making soda bread for quite some time. Made three different recipes yesterday. This was far and away the better. "Delicious" "Easy" and I too added caraway. I did have one problem. The dough was so moist that the bread was less of a boule shape and flatter than I wanted. Suggestions?

    Delicious!!! I was really, really, reallllly worried because my dough was so wet that it looked more like a blob than a loaf. However, the magic that happened in the oven is amazing. It came out perfectly risen with the most amazing flavor. I will come back to this recipe every year now. Thank you!

    So, so easy! It was a big hit with my guests! Nice crust over fluffy bread. Not leaden like the Irish soda bread you get in stores.

    I have been baking Irish soda bread for 15 years and this one is the Best! I made this today and followed the recipe exactly, however I added caraway seeds for a little extra taste. The orange rind makes the flavor pop. If you purchase a quart of buttermilk you can make two loaf of bread which it perfect as I always had left over in the past and it just sat in the fridge. The texture was so light and fluffy and soft you just cannot stop eating it. Everyone at our dinner loved it and could not get enough. I will only use this recipe from now on.

    I've been making this particular recipe for years - it turns out perfect every time! The only thing I change up is the dried fruits to whatever I happen to have in my pantry ... dried blueberries, craisins, raisins, apricots ... I read some concerns over the dough texture - yes, it's a moist dough, but I throw it down onto a 1/8 cup floured Silpat mat, sprinkle a bit of flour over the surface, give it about 8-10 kneading turns, and set it onto another Silpat mat on a jelly roll pan and into the oven .... mmmmmm, GOOD!
    *p.s. - I won't give any credit to a review that changes the recipe (ingredients and technique and then gives it 1 star*

    Very tasty, but have to watch the video first if this is your first time. Very wet dough and you have to work fast. I didn't the first time and over mixed it and it was even more difficult to work with. After watching the video, I followed it exactly as she did and it was easier to work with. Both tasted great though.
