    This soup took me 1hr. and 15 minutes to make from start to finish - soooo worth it!!

    A few tips that worked well for me:

    In my opinion, if you're not going to use homemade chicken broth (which I did not you have 2 choices: either add some boullion or make sure to serve with a good amt. of parmesan cheese to kick up the flavor - I did both, and it was AMAZINGLY flavorful.

    I didn't have white wine so I squeezed in some lemon juice instead - wonderful substitute.

    Used fresh parsley instead of dill - worked perfectly.

    Meatballs were, in a word, to DIE for. They would be excellent with pasta aglio olio - can't wait to try it...what is it about Ina's recipes? So simple, but so amazing!

    Anyways, just take the hour and make this soup - you will NOT be sorry!!

    This was so easy and delicious...I've already passed the recipe on to friends. I do agree with 2 previous posters and recommend the following adaptions: eliminate the dill, it's just not Italian; and swap out the spinach for a head of escarole, chopped. There's something magical that happens when escarole cooks in chicken soup! These meatballs are amazing and will be a great appetizer on their own. Yum yum! Thanks Ina!

    this was easy, quick and so delicious....even my picky 7 yr old loved the meatballs. I substituted lean ground turkey and turkey italian sausage for the meat and it was wonderful. This is going in my recipe box!

    This was fun to make and great to eat. I always take alot of heat when I just serve a soup for dinner. This one brought rave reviews by both husband and daughter. I had it for lunch today. The recipe makes quite a bit and I do believe it's way better when freshly made. Way to go BC!

    Saw Ina make this and couldn't resist trying it. It was easy and the result was a total crowd-pleaser, but I'd like to point out one inconsistency: On the show, Ina says to use 5 cups chicken stock, and her online recipe says to use 10. I definitely recommend using the full 10 cups, as there would have been no soup-like consistency had I only used 5. It's already pretty thick with the 10 cups.

    I also added mushrooms to this recipe, since I love them in just about everything and thought it seemed like a good fit.

    I love Ina and her recipes...however I must comment on this recipe: being Italian and making this soup (which we just call chicken soup, never wedding soup for most of my life I have to say we would never, ever use dill. Dill is not used in Italian cooking. It doesn't belong in this soup. And the meatballs should be smaller, about the size of a marble, and dropped into the simmering soup raw...no need to pre-cook as they will cook instantly. They give even more flavor when added raw. And sometimes we used chopped escarole instead of spinach. Stir in a handful of grated cheese at the end, after you take it off the heart.

    I made Ina's Italian Wedding Soup after seeing her make it on the show. The meatballs are amazing. My husband and I ate 1/3 of them before I even got the soup made!!! I made them with ground chicken and sweet Italian turkey sausage. I just made the meatballs again and doubled the batch because they would be perfect for appetizers or to serve anytime with pasta, etc. Ina NEVER disappoints. Thanks for another terrific recipe that is bound to become a family favorite.

    I made this soup tonight for a birthday dinner I threw for my sister and brother. Because I wanted to do a more little finger food (i.e. appetizers I wanted to make something substantial, yet fulfilling, prior to the main course. Instead of bread and salad, this soup was it!!! I made the soup extra healthy by skimping off the grease from the home made broth. the soup was a hit! I used little tortellinis for my "carbohydrate" within the soup! EVERYONE LOVED IT! Ina, you're the best! You know what they say...."if you can hold the stomach of a man you can hold his heart!" Aside from all jokes and fun, this is a great soup to have. We ALL loved Itead ! Yummolicious!
