This soup recipe is absolutely fantastic!! I always use both spinach and escarole. My family LOVES this recipe. I bring all the ingredients to my mother's nursing home and have a group of residents make it with me and it's a huge hit!! Plus, the residents feel like they're at home again making something homemade. I highly recommend this recipe. It's awesome.

Made the recipe as written - delicious!! I was doubtful of using ground chicken/chicken sausage as I've always had wedding soup with beef or beef/pork/veal meatballs, but I couldn't stop eating them after they were out of the oven! I will definitely be using the meatball recipe again! They soup part was also great. I think next time I make it I'll do parsley instead of the dill, and cook the pasta separately because it soaked up a lot of the broth when it was stored in the fridge. Plan on adding more chicken stock if you don't eat it all in one sitting. (I used half homemade and half Kitchen Basics stock.

Delicious! I used ground chicken and mild pork sausage for the meatballs, and they were great! My husband loved it.

As all good cooks do, I changed a few things in this recipe to accommodate my family's tastes. I put more carrots and celery in and only used a pinch of dill. I can't imagine putting 1/4 cup of dill in this soup. With just a pinch, it was very strong and even stronger the next day. I also used Trader Joe's spicy chicken and jalapeno sausage instead of the meatballs. I used mini bow tie pasta. It was fast and easy. The soup is delicious.

This is one of my all time favorite soups! I add a LOT of spinach to the bowls, then add soup on top. That way the spinach is always beautiful, even if you have leftover soup!

This is my 10-year-old son's favorite soup. I love that it is low fat and has lots of veggies. The dill in the soup gives it an extra depth of flavor. I like it with a couple of dashes of hot sauce and extra parmesan.

This recipe is one of our household staples; I make it at least once a month and never tire of it. The flavors are light and complex at the same time, and it tastes like something much more labor intensive. I always double the recipe for the meatballs and save half to serve with pasta sauce and spaghetti squash later in the week. My husband does not care for soup, but LOVES this stuff. Thanks Ina!
