I've been making these cookies for a few years now and they always turn out great. I also like to make the cookies a little smaller. For some variety (and for those who don't like coconut, you can roll the cookies in sesame seeds too. I think both ways are delicious, and like to use different jams as well (apricot, raspberry, blackberry, etc.

I made these last weekend and this recipe is definely a keeper. These taste like butter cookies with coconut and jam. I made then a little smaller almost bite size, great with tea. Really easy to make and I followed the recipe exactly.

I love Ina, and I love these cookies. I made them last year for Christmas and was lucky to have any left to give as gifts. The cookie is full of flavor with just the right amount of crispness. The jam filling, I used both flavors, adds a sweet smoothness to contrast with the crunchy coconut. Probably best of all, they are easy to make. I am making them again this year, and they will be a regular part of my Christmas baking routine. Thanks Ina. Keep up the good work.

I made these last year and they were delicious. For variation, I ground some almonds in the food processor and rolled them in that before baking and also rolled some in sugar. (Some people don't like coconut. I also tried some different flavors of jam. This year I bought some cherry preserves to try. Can't wait to try them!

I pureed my leftover cranberry sauce to use as a filling for these. I made the recipe exactly, though I had to do it by hand as I have no mixer. My right arm is sore today, but it's totally worth it, the cookies are buttery little shortbread dreams with sweet tart filling. Delicious!

These are my favorite cookies ever. They are a real croud pleaser. Even if people say they dont like coconut, they still like them. I love them with Raspberry Jam. I have also tried Blackberry Jam and come out really good. What I do most of the time is make the dough, form the cookie, then cool them. If you cool them too long, the dough gets to hard to form them. I'm about to bake some now!!!

These cookies were delicious, though I did make some changes. I added a bit of the eggwash mixture to the dough, because it was a bit too dry/crumbly to roll into balls. I also didnt coat them in coconut because my family doesnt like it. They turned out great though, I filled them with my home made blackberry jam and they were a hit.

I love to bake but unfortunately my husband does not have a sweet tooth. Cookies, brownies cakes, all go uneaten at our house. The only cookie my husband asks for and eats all of is this one! I think that says a lot. I am making them again for our anniversay today!!
