These cookies look great and taste great! You'll like these cookies even if you don't like coconut. Dough was not dry or coconut did not burn like some reviews indicated. I have tried several of Ina's recipes and they all turned out perfect.

The cookies are rich, satisfying and full of flavor. The toasted coconut gives it an even bigger taste. Tender, delicate and very festive!

For the last two years I have baked these cookies and given them as Christmas gifts just as Ina did on the show. If you were unable to see the show, Ina placed a stack of six cookies in a clear celophane bag tied with a bow and then gave two bags to each of her friends.
The cookies look fantastic and taste phenominal. Unlike other Christmas cookies that need decoration after baking, these cookies look wonderful straight from the oven. And the recipe could not be more simple.
I use apricot, red rasberry, and black rasberry jam for a variety of flavor and color. You can't go wrong!

I tried these cookies and they were great. I also tried a batch with half a tube of almond paste mixed in while creaming the butter and sugar together -- it added just a hint of almond that went great with the raspberry and apricot. I also tried a batch with lemon curd and it was great.

These cookies were very easy to make and VERY tasty! Make sure that the butter is at room temp otherwise it won't work. The paddle attachment also works a lot better than regular old beaters. I used apple cinnamon jam and they tasted like mini apple pies. Thank you for the recipe!
