If your dough is too crumbly...try this out.
Pressed for time, I only let my butter rest at room temp for 5 min. After creaming the butter, sugar and vanilla, I slowly added the flour/salt and the dough came PERFECTLY, not crumbly.
(Using a Kitchenaid mixer. Not chilling it, I poured the dough onto my work surface and rolled it into a log, cut 1/2 inch rounds which weighed 1 oz on my scale - it made 37 cookies. They were easy to roll into balls. They were dipped in egg and rolled in coconut and cooked up nicely! Thanks Ina!

I made these to include in gift baskets for my friends and they were a big hit! Everyone loved them -- I wish I'd made more! Simple, delicious and pretty!

Read other reviews and was wasn't sure if I should try this recipe. BUT I am glad I did because they came out great! I took one reviewers suggestion and added one egg yolk to sugar and butter mixture. I believe that saved the dough from being too crumbly. I also used a hand mixer and didn't over mix, just until ingredients were combined. When I rolled dough in coconut I didn't put any on the botton of dough just in case it burnt like others had experienced. The cookies are light, buttery, and SO yummy.

I decided to try Ina's recipe,ans actually follow her idea for giving them as gifts!The only problem I had with the recipe was the same everybody else seem to have,the dough was crumbly.I got a little worried,because I am not a cookie maker,so I thought I was doing something wrong,especially since I doubled the recipe!I just broke enough off to make the balls,and worked with it .The rolling them in my hands warmed them up so they held together.Bottom line is it came together very well!The cookies came out fabulous,I used apricot and raspberry jam.Everyone at church couldn't stop talking about how light and delicious they were.Yesterday before work my husband was having,yet another one and he who does not volunteer compliments,told me do not lose the recipe,because"these are the best cookies I have ever tasted".I love them!

I'm not much of a baker but these turned out great and my husband loved them. The jam isn't too overpowering or gooey and the coconut absolutely makes them. I needed to add a bit of water to my dough and let it warm up a bit also, as it was a tiny bit too crumbly to start.

this is a super holiday cookie. the dough was a little crumbly, so i added a bit of water to soften it up. the cookies ended up tasting just fab- this recipe is a keeper
