I am not a good baker but this recipe is just amazing! I noticed that some poeple had a crumbly dough. You have to have your butter at room temperature so it gets really creamy and coats the flour well. I did not need any egg wash. The dough was moist enough to stick coconut flakes when I pressed the individual ball of dough into it. This cookie is not too sweet but the jam in the center makes it perfect. I thought just making 32 cookies make the cookie relatively big. I would make about 40 or so. THis cookie is very buttery almost like a shortbread. Yum!

I am not a good baker, but I must tell you this recipe is amazing! I followed the instruction carefully.
I read some comments that it was a crumbly dough. I think you need to have your butter in a room temperature so it gets creamy easily and you can really get all the butter coating the flour. This cookie is not too sweet and very buttery alsmot like a shortbread. I love it!

These cookies are awesome! My boyfriend took them to work along with other homemade cookies, and they were the first gone. They are super easy and delicious. (just as a word of caution though, when dipping in the coconut, make sure you only dip the top of the ball, if the bottom has coconut, it burns easily. Enjoy!

I love these cookies. i had a similar cookie growing up but these are great with the coconut they look like little
snowballs! I used peach preseves, becasue I did not have apricot, and they were delicious.

I was a little skeptical in trying this after reading a few of the bad reviews, but I'm thinking, now, that those who gave low reviews must have tried something else. Yes, the dough was a little "crumbly" when I began making balls, but it went together well, the egg wash made the coconut stay on, and the raspberry jam gives a nice twist (don't put too much. This recipe is EASY, so tasty, and it is a great diversion from my normal holiday standards. I can't wait to share!
