These cookies were easy to make as promised and delicious. I had a few problems just rolling the dough in the coconut, but I just pressed in some flakes to the sides and it worked out well.

To get the dough to come together: start with softened butter.
use a mixer until the dough is in little balls and mixed up- then put your hands in there and squeeze together. then put it in the fridge for only 30 minute,no longer, then when you roll the cookies by hand, the heat from your hands keeps the cookies from getting crumbly. bake for 15 minutes

I too had a problem with a crumbly dough. I believe the flour listed may be the high end of a range - to be judged as you mix the dough. It was necessary to increase the other ingredients in order to get the appropriate consistency to work the dough into 1 oz. balls. The coconut crust was a rather nice touch, and flavorfilled. Without the coconut and the jam, these would be without flavor. These received 2 thumb (prints down from the family - although I do think they were a touch harsh.

This dough was too crumbly! I could not for the life of me get it to form into a ball. I gave up, put the whole crumbly mess in a ziploc and chilled for 30 mins. I was hoping it would form after that but it was not happening. I dumped the whole thing back into my kitchenaid, added 2 heaping tablespoons of sour cream and that formed into a nice soft dough for me. I chilled again for 30 mins. and followed the rest of the directions. The coconut burned if I let it cook the full 20 mins. 15 mins was sufficient but the coconut was still dark. It tasted very buttery. I think this was a hard recipe to do for the taste result I got. I would rather do sour cream spritz cookies than this.

very easy to make and very delicious to eat!
