Easy & Elegant!

If your dough is too crumbly...try this out. Pressed for time, I only let my butter rest at room temp for 5 min. After creaming the butter, sugar and vanilla, I slowly added the flour/salt and the dough came PERFECTLY, not crumbly. Add extra vanilla if you find them too bland. (Using a Kitchenaid mixer. Not chilling it, I poured the dough onto my work surface and rolled it into a log, cut 1/2 inch rounds which weighed 1 oz on my scale - it made 37 cookies. They were easy to roll into balls. They were dipped in egg and rolled in coconut and cooked up nicely! Thanks Ina!

These cookies were wonderful! The combination of the fruit center and the cookie makes this cookie taste especially good with a hot beverage. I used strawberry jam instead of raspberry. This is a winner.

Very easy to make. I would agree with a previous review and bake them longer at a lower temp so coconut doesn't burn. Family loved them. Thanks Ina for a terrific recipe.

Crumbling dough, too stiff to handle after chilling, you need to bake longer at slightly lower temp so coconut won't burn, otherwise tasty cakelike treat.

I just finished making these wodnerful cookies for friends and neighbors for the holidays. I followed the recipe exactly and love this one. They are pretty and elegant. I did half with pineapple preserves for a Hawaiian flare and they came out great. I will definitly make these year after year. Got a great upper body workout rolling all those balls too!

I baked my first batch of cookies for 20 minutes and all the bottom of the cookies were very dark brown. They were OK at 17 minutes, but a little doughy in the middle. Next time, I will use an insulated cookie sheet or double cookie sheets and not put coconut on the bottom of the cookie. They need to be baked 20-25 minutes to get the right consistency.

My cookies turned out beautiful to look at and the packaging in the clear bag with holiday ribbon really set them off. However, the cookies that I sampled reminded me of a cheesecake sort of cookie. Soft with not a lot of taste. Are they suppose to be a firm cookie, soft cookie, crunchy cookie? The recipe seemed to work fine. I just wasn't sure if I let them cook long enough.

These cookies turned out great and so easy to make. I did half with melted semi-sweet chocolate chips in the center in place of the jam, b/c my husband is a chocoholic! They turned out great and everyone in the family had their favorite.
