These were so easy, and taste great, I made these for a Christmas Cookie Exchange. I had to make five extra dozen, could'nt keep my husband out of them.

Usually, I prefer recipes with chocolate, but these are awesome. My husband says I'll have to make another batch before Christmas as this one will be all gone before then.
I also used Ina's idea to package these in little gift bags with ribbon bows and gave them to all of my children's teachers.

Very delicious and tasty. Also got lots of compliments from coworkers after bringing into work today. I didn't experience crumbly dough as in some previous reviews, but I did have some difficulty with the coconut browning too soon before the cookies were done baking. I just lowered temp a bit.

I've made the cookies a few times, sometimes the dough crumbles, sometimes it doesn't. When it does crumble I add a little milk and it helps the dough come together. It also helps to make the cookies the suggested size, take your time and don't give up when they don't come out, they are worth the try.

Although a bit tedious, this recipe is quite good. I was able to get 33-34 one-ounce cookies out of this recipe. The cookies are easy to store stacked on top of each other and the coconut smells great when it begins to toast in the oven. I'm not a baker by any means, but this recipe was simple enough even for me.
