I have been making these cookies around the holidays for years, and they have to be my family's favorite cookie. So delicious and so easy! I do make a large thumbprint and put anywhere from a 1/2 t - 1 t of jam in the center. Nobody complains about the extra jam. , , in fact those cookies are the most sought out. I give these as gifts, and people are always thrilled to get them year after year. What a great recipe!

I have been baking these EVERY holiday season (due to high demand and expectations since the show aired about a few years ago. For those of us who have run into problems, please don't despair. I too, have run into a few probs here and there and here are some very helpful baking tips for this recipe.

    1. " The dough is too crumbly." Depending on how dry or humid the weather is, the cookie dough may seem drier one day than the next. Much like making pie dough. Simple solution: Add a tablespoon or so of milk and mix through until the dough forms clumps that can be formed into a ball.
    2. " The cookies were burnt on the bottom- even before they were fully baked." Try not to use dark-colored cookie sheets which tend to absorb more heat. The ideal cookie sheet is dull, grayish, and has sides the more than an inch tall. Use parchment paper. If you have insulated cookie sheets or Silpat liners, that is even better. Never bake cookies on the lower rack. Bake them on the middle rack ONLY.
    3. " They spread out too much." This is essentially a shortbread cookie which means it's loaded with butter. Butter melts. For this reason, I like to freeze the cookies already assembled and on the cookie sheets for about 5-10 minutes before baking. Alternatively, you can chill them in the fridge for half an hr. This gives the butter a chance to re-solidify which eliminates the problem of spreading out and becoming flat. Same goes for most cookies that have a high ratio of butter. Putting cookies in an oven that isn't hot enough (inadequately preheated will also cause them to spread before they have a chance to bake.
    4. " The jam filling ran out of the center." The steps mentioned above will take care of this problem. Also, I use my pointer finger as opposed to my thumb so that the indentations are more narrow and deeper. Anymore than 1/2 tsp. jam is bound to run out and melt out of the center.
Happy Baking and I hope I helped someone out there :

I've made these as holiday gifts for several years now. I've found that I prefer seedless raspberry the best! These cookies really are foolproof... and it's difficult to let them go to the neighbors. I just wanna eat them all. You must try these!

Thanks for such a great recipe! I took them to a cookie exchange party and they were a big hit with all the adults. They are now known as "The Adult Cookie" with my friend and family..

I've been making this recipe for a couple of years now. Every time I make it, it is perfect. Some of my good friends like lemon, so I substitute lemon curd for jam sometimes and boy are they a hit!

I've been making thumbprints since I was little, and I have tried many recipes. This is BY FAR the best! I'm not a coconut fan, but you can hardly taste it (you don't get the coconut flake texture. My girlfriend used a very finely chopped coconut and it was FABULOUS! I think this is going to become more than a Christmas cookie for me!

I'm not a big fan of thumbprint cookies, but these were awesome! The coconut flakes add a nice toasty, nutty flavor...not coconutty at all, for those who don't like coconut. A must-have recipe!

Chewy, yet soft, this cookie is the ABSOLUTE best cookie I have ever made or tasted! I give trays of these to family, friends and coworkers and they go crazy over them!! To try a new taste I substituted Ghiradelli pieces in place of the jam( push into hot cookie when taken out of oven and it was also delicious! I also tried it with macadamia nuts in place of the jam, and also yummy! Thanks Ina for one great and easy to make cookie!!
