I made these during the holidays after seeing Ina make them on her show. Sweet, toasted coconut, crumbly, shorbread cookie...just delicious!

pardon the pun, but these cookies are great. they are so easy to make, and yield such impressive results. one trick i have is to put the jam in a ziploc sandwich bag and cut a small hole in one corner--it makes it easier to put the jam in the hole, plus it makes the cookies look more professional and consistent when baked.

I followed the recipe exactly, but took others' advice about using very soft butter (left it out all day to soften and not putting coconut on the bottom of the cookie. They were wonderful (even better than my mom's!. The dough will be very crumbly when you dump it out of the mixing bowl, but will come together when you work it with your hands. I was careful to work it just until it came together. I'm paranoid about overworking dough. I think another reviewer's comment about the flour is a good one. I alway spoon my flour into the measuring cup instead of scooping it. You'll be surprised at what a difference it makes in the amount of flour added to a recipe.

Another winner from Ina. Nothing more to say, but double the recipe!

I made these for the holiday season and took them over to my family's house. They loved them. Everyone wanted the recipe. I have to admit forming the balls took some time, but everything else was very easy. Ina is the best.

Every year, I bake 12 or 13 different kinds of cookies and try never to duplicate except for the perennial favorites like sugar cookies and wedding cookies. This recipe will be added to that list. As there are no young children in our extended family anymore, I make cookies for adult tastes: this year, chai shortbread, curry cookies, key lime sparklers, etc. Of all the cookies, these were the best and received the most complimented. I don't understand the dryness issue people are having, but I might know. The biggest rule of baking is to fluff up your flour with a fork before measuring, spooning it into a measuring cup and topping off. People tend to pack down the flour and it is too much flour yielding a dry result. The recipes are not written for packed flour, and this little extra effort will prove worth it, trust me. King Arthur Flour recommends measuring this way and it works. Of the Food Network chefs, I used to have another favorite but Ina Garten is slowly converting me from comfort food to simple, delicious food that is also usually healthy as well. So just as these thumbprints will be added to my favorites, so will Ina Garten! BTW, I've made many jam thumbprints in the past, but the coconut really makes these special and far from pedestrian. Please try them. If directions are followed, they will not disappoint.

I have searched for years for the perfect cookie recipe. This is it. Crunchy on the outside, soft in the middle.

These cookies are definitely delicious! Rich and butter and the coconut is a must; I love how it toasts and gives more texture to the cookies. I also made 1/2 the cookies with mixed chopped walnuts and pecans, which also turned out delish! The dough is relatively labor intensive ESPECIALLY if you do not have a stand mixer. I used my hand mixer with dough hook attachment once I added the flour. I had to work the dough with my hands in order for it to come together (the heat from my hands melted the butter and made the dough softer and more pliable. I then rolled the dough into 35 balls and then refrigerated them. When I was ready to bake the cookies, I took the dough out of the refrigerator a couple hours beforehand.
Some words of advice: you might not need to bake the cookies as long as the suggested time and try not to coat the bottom of the cookies with the coconut, so they will have a lesser chance of burning before the cookies are done!

These cookies turned out great. I added
holiday sprinkles to give the jam more sparkle and used as gifts like Ina suggested. Everyone loved them!

Not only are these cookies sublimely delicious, they are extraordinarily easy to make. The brilliance is their simplicity, I think. Just a few ingredients combine to make a cookie that melts in your mouth. Fabulous!
