I've been wanting to try this recipe for a while. I watched the episode a long time ago; then it came up again.
I have rarely, if ever, roasted a chicken (25# turkey, yes, little chicken? I don't remember!
This was so good; juicy, flavorful, and my croutons were the best!
I used a Meyer lemon from my tree, and added fresh rosemary and thyme to the cavity. When prepping a side of veg, I thought about garlic and added a couple cloves to the juices.
Ina mentions the onions burning, but mine were far from it as I had a lot of juice; at least an inch. I think I might use a larger roasting pan (mine was round and about 1" to spare around the bird. This meant the juices really collected around the bird, so the lower skin didn't get as crisp. I think that would be solved by using a bigger dish. Oh so yummy!

This is easily the best and easiest roasted chicken ever. You'll want to devour the croutons. I serve this frequently and to company and have never had a complaint. Easy and flavorful. I usually add a little more onion (because I love it to the recipe, but other than that - it's great according to Ina's recipe. Between this recipe and her Perfect Roast Chicken recipe, you've got all the recipes you need for a whole chicken.

Easy and just plain delicious!!! Nothing like the perfect roasted chicken. I also added garlic, thyme, sage and rosemary in the cavity of the chicken for a little extra flavor. Amazing dish!

Yum!
I just made this, right now, and it's really good. I had a whole rotisserie chicken from Costco, so I warmed it up and cooked the croutons-Next time I might try it from scratch with the lemons, but it's great this way too.The chickens from Costco are very flavorful.

My family loves roast chicken and this was no exception. The croutons just put it over the top! My husband and kids loved them! I love that I can use the Meyer lemons from my tree. A wonderful Friday night meal!

Fabulous! This is my go to roasted chicken! It's always a crowd pleaser whether it's a week night dinner for the family, or a classy dinner party...this will impress! The chicken is moist and the crispy skin is sinful. It's the perfect chicken every time!

This was the first time I roasted a chicken and it was fantastic! Such good flavor and I added some fingerling potatoes to it which also turned out very nice. Loved it!

Overall, a very good recipe. The prep time for this is very short, making it a good weeknight dinner. The chicken is a bit understated, so if you are going to serve this to company, I would suggest a flavorful side dish and good dessert to go with it.
