I definitely enjoyed this dish. Adjusted somewhat, but did the basic things. Will use this dish again and again!

This chicken dish was one of the best I've ever tasted. I followed the recipe given in her wonderful "Barefoot in Paris" cookbook which has you place sliced yellow onions in the bottom of the roasting pan and then placing the chicken on top prior to roasting. On the TV show, Ina omits the onion base for some unkown reason. The onions add tremendously to the flavor. I even liked the croutons au juice better than mash potatoes and gravy!

This recipe was fantastic. The onions add great carelized flavor to the dish.
The croutons are a unique aspect to an otherwise staple dinner fare. I would highly recommend trying this dish. It was easy and fun to prepare.

A moist and flavorful chicken. I tipped the pan to drain some lemon and chicken juices and basted the chicken with it. Half way thru cooking I added a small amount of water to the bottom of the pan, after some of the onion slices had gotten very brown, and poured all the onions and juices into a serving bowl and seved it as a gravy after defatting it. It was delicious.

My husband and children (ages 6,6 and 9 all loved this dish! The only variation I made was to add fresh rosemary sprigs to the quartered lemons in the cavity. Wonderful! Try it!
